Lemon Blueberry Zucchini Bread Recipe
If you’re looking enough to have a few large zucchini growing in your garden, grab them and use them for this recipe! You can easily use a box grater and a large bowl and shred them nice and thin. And don’t worry – no one will even know that there is zucchini in this recipe because it bakes perfectly in the loaf pan!
My boys love this simple sweet bread and are never the wiser that I’ve actually added in shredded veggies. All they ever say is that they love the lemon flavor of this simple and sweet dessert.
How do you know when the bread is done baking in the oven?
The toothpick test is perfect! Once the toothpick you put into the center comes out clean, it’s time to take the bread out of the oven and let the cooling process start.
Pay attention to the baking time and then test with a toothpick.

How do you keep the bread from sticking to the pan?
The best way to handle this is greasing and flouring the pan. Once it’s cooled completely, you can plan on taking it out of the loaf pan and cooling on a wire rack.

- ⦁ 2½ cups of all-purpose flour
- ⦁ 1 t of salt
- ⦁ ½ t of baking soda
- ⦁ 1 t of baking powder
- ⦁ 1 t of cinnamon powder
- ⦁ 1 t of nutmeg
- ⦁ 3 eggs
- ⦁ 1 cup of vegetable oil
- ⦁ 2¼ cups of granulated sugar
- ⦁ 2 t of lemon extract
- ⦁ 2 cups of grated zucchini
- ⦁ 1 cup of blueberries (fresh is preferred but if you use frozen you need to pat them dry and get rid of the extra liquid)
Preheat the oven to 325 degrees.
Grease the loaf pan.
Mix the baking soda, flour, salt, baking powder, cinnamon and nutmeg in a bowl.
Use a different bowl and mix the eggs, sugar, oil, and lemon extract. Fold in the shredded zucchini. Mix in the dry ingredients.
Pour the batter into the loaf pan, about 3/4 full.
Fold in the blueberries.
Put in the center rack of your oven and bake for 50-60 minutes.
Cool on wire rack for 15 minutes. Take out of pan and continue to let cool on rack.
