Peanut Butter Chocolate Chip Banana Bread Recipe

This peanut butter chocolate chip banana bread recipe has all of my favorites (except bacon) in it! I love making this for Sunday brunch recipes as well!

Quick to make and quick to devour, this is the perfect after-school – heck, or before school – treat!

Mix it up, then, stick it in the oven about an hour before the kids come home or company comes over and have a yummy smelling home AND a delicious treat ready when they get there!

Ingredients
  

  • 1 Cup(s) all purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ Cup(s) granulated sugar
  • ¼ Cup(s) packed brown sugar
  • ¼ Cup(s) vegetable oil
  • ¼ Cup(s) creamy peanut butter
  • 1 large egg
  • 2 bananas mashed
  • 1 teaspoon vanilla extract
  • ½ Cup(s) chocolate chips

Instructions
 

  • Preheat oven to 325 degrees.
    Spray loaf pan with non stick cooking spray and set aside.
    In a large bowl, whisk all dry ingredients together until combined- flour, baking powder, soda, salt, cinnamon and sugars.
    Create a well in the center and pour in remaining ingredients, excluding the chocolate chips.
    Mix until just combined. Stir in chocolate chips.
    Bake 40-45 minutes or until toothpick comes out clean when inserted.
    Cool 5 minutes in pan and remove to cooling rack.

  1. I’ve made this before exactly as the recipe states and it was delicious! I wanted to kind of change up some of the ingredients this time though. How can I substitute applesauce in place of bananas? Also, can I use coconut oil or butter in place of vegetable oil? If so, how much? Thanks so much!

    1. I’m so glad you liked the recipe! For the changes you are looking at doing, you should be able to swap out the vegetable oil for butter or coconut oil using a 1:1 ratio. (I’ve never made it this way, but that is what I would likely try) Instead of using the bananas, you could try with applesauce. I researched and found that some people use 1/2 cup applesauce per 1 banana in recipes, so that is a good starting point! 🙂 Be careful not too add more than 1 cup of applesauce total as that will likely make the mixture too wet and have issues baking. Let me know how it tastes if you make the swaps!
