Strawberry Cheesecake Ice Cream Recipe
Since this recipe doesn’t require an ice cream machine, this means that you have simple steps to take to make this homemade ice cream. The flavor of the strawberries and graham cracker provide a great ice cream base and the graham cracker crumbs add a nice crunch.
My boys really love when I create this sweet treat because it’s light and refreshing and just reminds them of summer. I love that it’s so fast but it tastes like I spent a lot of time on it. Momma needs some credit here and there for cooking all these good things!
To get that ice cream texture, you’re going to want to add it to a freezer safe container and store it in the freezer. It will take a few hours for everything to firm up a bit, so be patient because it’s worth it!

- 8 ounces of cream cheese
- 2 cups of heavy whipping cream
- 1 cup of sour cream
- 1 cup of sugar
- 1 tsp of vanilla
- 2 T of lemon juice
- 1⁄4 tsp of salt
- 3⁄4 cup of strawberry topping
- 4 graham crackers
- Mix the cream cheese, whipping cream, sour cream, lemon juice, sugar, vanilla, and salt in a bowl in the food processor. You can also mix with a mixer.
- Mix until smooth. Layer the mixture in a freezer-safe container with a layer of the mixture, followed by dollops of the strawberry and crushed graham crackers.
- Make swirls in the mixture after you layered it using a butter knife. Cover it with plastic wrap with the film right over the top of the mixture and then put on a lid. Put in the freezer and let it firm up overnight.
