Strawberries and Cream Rice Krispie Treats Recipe

I’m a big fan of desserts that don’t need plates. This means the kids and I can grab a bite as we work through the kitchen and enjoy eating it on the go.

Because sometimes, we don’t have time for a dessert to sit down and enjoy – and this is where making homemade Rice Krispie treats comes into play! The best!

I’ve made this recipe many times, and we’re yet to think of anything else. It’s one of our favorite spring and summer desserts because it’s light, filling, and sweet!

How do I store Rice Krispie Treats so they don’t get stale?

Storing Rice Krispie Treats properly is essential to maintain their delightful crispy texture and prevent them from becoming stale. To keep them fresh, first, ensure that the treats are completely cool after making them.

Once cooled, place them in an airtight container, separating layers with wax paper to prevent sticking. If you plan to store them for over a day, wrapping each treat individually in plastic can provide extra protection against air and moisture.

Keep the container at room temperature in a cool, dry place away from direct sunlight. Avoid refrigerating as the cold can make them hard and diminish their signature crispness.

For longer storage, you can freeze the treats for up to six weeks; when you’re ready to enjoy them, thaw them at room temperature. Following these storage guidelines, your Rice Krispie Treats will remain as crisp and chewy as the day you made them.

Why are my homemade Rice Krispie treats hard?

When homemade Rice Krispie treats turn out hard instead of soft and chewy, it’s usually due to a couple of common missteps in the preparation process.

One of the primary reasons could be overcooking the marshmallows; if they are heated for too long or at too high of a temperature, they can become tough, causing the finished treats to harden as they cool.

Another factor is the ratio of marshmallows to cereal – using too few marshmallows will result in drier treats with less binder to keep them moist.

Also, pressing the mixture into the pan firmly compacts the cereal and marshmallow mix, squeezing out the air and contributing to their signature light texture.

To ensure your next batch stays soft and chewy, slowly melt the marshmallows with gentle heat, measure your ingredients carefully, and lightly press the treats into the pan.

Ingredients
  

  • 6 Cup(s) Rice Krispy cereal
  • 1 10- ounce bag marshmallows
  • 3 tbsp of unsalted butter
  • 1 Cup(s) of crushed dried strawberries
  • 1 Cup(s) pink candy melts
  • 1 Cup(s) white candy melts you’ll be splitting this in the recipe
  • 2 tbsp coconut oil or paramount crystals

Instructions
 

  • Grease a pan and set it aside. You can also line it with parchment paper and grease it.
  • Add the butter and marshmallows to a microwave-safe bowl.
  • Heat for 45-second increments until the marshmallows begin to puff. Take out and stir.
  • Add the cereal and the dried strawberries and mix.
  • Add the mixture to the prepared pan and press down slightly.
  • Melt the pink candy melts, and 1/2 of the white candy melts in 30-second increments, stirring after each time, until melted.
  • Add the other 1/2 cup of white candy melts to a piping bag and heat for 30 seconds.
  • Mash, flip the bag and heat for another 30 seconds.
  • Add the coconut oil to the bag and stir. (this will help to melt the chocolate and thin it a bit)
  • Pour the pink chocolate over the Rice Krispies, then spread it evenly over the top with a spatula.
  • Cut a tiny hole in the tip of the piping bag and drizzle over the top of the treats.
  • You can use a toothpick to draw a line down and up and create designs on the top.
  • Place the dessert in the fridge to set for 30 minutes.
  • Slice and serve.
