Using a cake mix creates light and fluffy cupcakes so quickly! This cupcake recipe with pineapple soda is about to be your new favorite dessert! While this might have a summer vibe to it, don’t count these cupcakes out for fall treats, holiday desserts, and more!

The fact that this recipe doesn’t use any pineapple chunks or crushed pineapple is crazy to me! The pineapple flavoring is so delicious that you’re not going to believe it!

I’ve made these cupcakes so many times that my boys literally ask why it hasn’t made an appearance if a month or two has passed without them. Trust me when I say that these cupcakes are BEYOND delicious and are a fun addition literally all the time.

Pineapple Soda Cupcakes Recipe

Using a yellow cake mix really does help you create these cupcakes quicker. It’s a simple cooking hack that a lot of people don’t think about doing! It’s the perfect way to make cupcakes without having to spend a ton of time and a great way to get that delicate balance of pineapple flavor.

My boys love to help with this cupcake recipe because they really do love the flavor. They say that these cupcakes remind them of the pool and all those fun summer vibes! Sometimes I’ll even add in a little coconut extract because I think it pairs perfectly with the fresh pineapple juice! (and they gobble them up just as quickly so I think that they’ll agree!)

What is the secret to good cupcakes?

This is the million-dollar question, right? Making good cupcakes isn’t actually hard to do, but it seems like people are always striving for that answer.

It’s actually not hard to make good cupcakes, but here are a few tips that will help.

First and foremost, make sure that you follow the directions. Next, make sure that you’re accurate in your measurements.

Last but not least, make sure that you’re not overmixing the cupcake batter. If you mix it too much, you’re going to stir in air, which can create air pockets in the batter and make the cupcakes dry.

Also – a tip for frosting the cupcakes. Let them cool down all the way before adding the frosting!

What are some fun toppings for cupcakes?

The frosting is a must to make, but if you want other options, I’ve got them! You can add powdered sugar on top for a little bit of sweetness or even just top these cupcakes with maraschino cherries. Whatever topping you add, just be sure to let the cupcakes cool completely first.

Sometimes, just for fun, we’ll set up a toppings bar for our baked cupcakes. This gives each person the chance to pick out the toppings they want to put on their cupcake.

And trust me, you’ll get some really crazy results! Some people add sprinkles, some people add crushed cookies, and some people (like me!) sometimes just add whipped cream piled high with sprinkles and cookies!

Pineapple Soda Cupcakes Recipe

This Pineapple Soda Cupcakes Recipe is a simple and easy way to make flavorful cupcakes!

Ingredients

Cupcake Ingredients:

  • 1 box of yellow cake mix
  • 1/3 cup of vegetable oil
  • 3 eggs
  • 1 ¼-1 ¾ cups of Pineapple soda
  • Pineapple Jello
  • cupcake liners

Frosting Ingredients

  • 2 sticks of softened salted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 4 cups of powdered sugar
  • 1 tablespoon half and half/whole milk
  • 2 tablespoons Pineapple soda
  • Pineapple Jello
  • yellow food coloring (optional)
  • piping bag & tip
  • Paper straws (optional)
  • Pineapple Sugar Decorations

Instructions

  1. Preheat the oven to 350 degrees. Add the cupcake liners.
  2. Add the boxed cake mix to a bowl. Mix in the oil, eggs, and soda. Add 1/2-3/4 of the jello.
  3. Put the cupcake batter into the liners about 2/3 full. Bake for 18-20 minutes.

How to Make the Frosting:

  1. Use a mixer and cream the butter for 2 minutes until light and fluffy.
  1. Add in the vanilla and the rest of the jello. Add the salt.
  2. Mix the half and half and the pineapple soda together in a different bowl.
  3. Slowly add the powdered sugar one cup at a time and then add the soda mixture in between each cup. Mix until cream and peaks form. Don't overmix. You can add in the food coloring as well.
  4. Put the frosting in the piping bag and frost the cooled cupcakes. Add the pineapple sugar on top.
