To make this rich and decadent dessert, the first thing to do is to crush those Oreos into fine crumbs and mix them with cream cheese. This combination creates the perfect truffle base that’s both rich and moldable. I love how the cream cheese adds a tangy note that balances out all the sweetness.

Adding caramel to the center is like hiding a little treasure. When you bite into one of these truffles, that smooth caramel flows out and mixes with the chocolate-cookie mixture. It’s seriously addictive!

How do I get the perfect coating on my truffles?

The answer here is similar to the first question – temperature control! It makes all the difference when coating truffles. I keep my cookie balls in the freezer until they’re really firm. About 30 minutes does the trick. The candy coating should be warm enough to be fluid but not hot, or it’ll make the truffles too soft.

I’ve found dipping tools work way better than regular forks. They let extra coating drip off cleanly and helped me place the truffles without messing up the coating. If you don’t have special tools, try using a regular fork and gently tap it on the bowl’s edge to remove excess coating.

Working in small batches keeps everything at the right temperature. I only take 4-5 truffles from the freezer at a time, then dip and decorate those before grabbing more. This way, they stay firm while dipping and set up beautifully!

Ingredients

  • 18 Oreo cookies
  • 4 ounces of softened cream cheese
  • 3 tbsp caramel sauce
  • 1 ½ cups white candy melts
  • Golden sprinkles

Instructions

  1. Add wax paper to a baking sheet.
  2. If the caramel is runny, put it in the fridge for about 20 minutes. You'll want the texture to be stiff for this recipe.
  3. Add the Oreo cookies to a food processor and pulse into fine crumbs. Pour them into a bowl.
  4. Add the cream cheese and fold.
  5. Roll the Oreo cookies and 1 1/2-inch circles. Once done, flatten them into discs that are about 2 inches in size.
  6. Add 1 tablespoon of caramel to the middle of each disc, then roll it back into a ball. Repeat until done for all.
  7. Put the pan in the freezer for about 30 minutes.
  8. Melt the candy melts according to the package directions.
  9. Take the truffles out of the freezer and coat them in the melted white candy. Once done, place it back onto the baking sheet.
  10. Add the golden sprinkles. Put the pan in the fridge for 20 minutes.
