Chocolate Truffles Recipe

Making chocolate truffles turns your kitchen into a chocolate lover’s paradise. The process starts with melting high-quality chocolate with cream. This simple combination transforms into a silky ganache that’s the heart of every truffle.

Adding a touch of butter to the mix gives the truffles an extra smooth texture. A splash of vanilla rounds out the flavor, making each bite a heavenly experience.

Now comes the real test of patience – watching the mixture cool before you can start shaping those delicious balls!

Rolling the truffles is messy but fun. It’s like playing with chocolate Play-Doh! The final dusting of cocoa powder adds a nice contrast and makes them look extra fancy.

What’s the secret to perfect truffles?

The secret to great truffles is using good-quality chocolate. Don’t skimp here! For the best flavor, choose chocolate with 50-70% cacao. Milk chocolate fans can use that, too, but you’ll need to adjust the cream amount.

Another tip is to chop your chocolate finely before melting it. This helps it melt evenly and quickly. Nobody wants burned chocolate!

And don’t forget the vanilla extract—it adds something extra to make your truffles shine!

Ingredients

  • 8 ounces semi-sweet chocolate
  • ½ cup heavy cream
  • 2 tablespoons unsalted butter
  • ½ teaspoon vanilla extract
  • 1/3 cup cocoa powder

Instructions

  1. Chop the chocolate into thin pieces.
  2. Put the chopped chocolate, cream, and butter into a heat-safe glass bowl.
  3. Put the bowl over a saucepan full of simmering water on medium-low heat. This creates a double broiler effect, but be careful that the water level does not come in contact with the bottom of the bowl.
  4. Heat the mixture until it is totally melted. Be sure that you are stirring often with a rubber spatula until the mixture is smooth.
  5. Remove the bowl from the heat, but be careful as the bowl will be hot.
  6. Stir in the vanilla
  7. Let the chocolate mixture cool at room temperature for 2-3 hours or in the fridge for 60 minutes. You want to cool the mixture until it starts to firm, but you don't want it to be solid. You want it to feel like playdoh.
  8. Add the parchment paper to a cookie sheet and put the cocoa powder in a bowl or small bowl.
  9. Use a spoon to scoop out a quarter-size of the truffle mixture. Roll the mixture between both hands to create a ball.
  10. Place the rolled truffle on the baking sheet. (you may need to wash and dry your hands if they are sticky)
  11. Roll the truffle balls in the coca powder and then roll them again between your hands to form a smooth ball. Roll once again in cocoa and put them on the sheet.
  12. Store the finished truffles in the fridge in an airtight container for up to 4 weeks.
  13. Let them set out at room temperature for 30 minutes up to 1 hour before serving.

Notes

Heavy cream or whipping cream can be used in this recipe, using milk or half and half will prevent truffle from setting up properly.
