Using a cake mix is a simple cooking hack for cupcake recipes. It’s the perfect “hack” for cutting down on the prep time without giving up any of the flavors.

Orange Soda Cupcakes Recipe

We like to use orange Crush soda for this simple cupcake recipe, but you can really use any type of orange flavored soda that you like. Also adding in the orange food coloring is optional as well, but I think that it adds a fun look!

My boys are all about helping with these cupcakes because the sooner that they’re done, the sooner that we all get to sit around and eat them! Sometimes I even forgo the frosting and just sprinkle on a little bit of powdered sugar instead.

How do you know when cupcakes are done baking?

Having a toothpick inserted into the middle of the cupcake that is in the cupcake liner is going to be your best bet. If the toothpick comes out with batter on it, that means that they need to cook a few more minutes or until a toothpick actually comes out clean.

Ingredients

Cupcake Ingredients:

  • 1 boxed white cake mix
  • 1/3 cup of vegetable oil
  • 4 egg whites
  • 1 ¼-1 ¾ cups of orange soda
  • 3/4 package of orange Jello
  • Orange food coloring (optional)
  • cupcake liners

Frosting Ingredients

  • 2 sticks softened salted butter
  • 1 tsp clear vanilla
  • 1/4 package of orange Jello
  • 4 cups of powdered sugar
  • 1 tablespoon half and half/whole milk
  • 2 tablespoons orange soda
  • Orange food coloring
  • piping bag & frosting tip
  • straws (optional)

Instructions

Preheat the oven to 350 degrees. Add the cupcake liners to the pan.

Add the cake mix into a bowl and mix in the egg whites, oil, and 3/4 cup of the jello at medium.

Add the batter into the cupcake liners about 2/3 of the way full. Put in the oven and bake for 18-20 minutes.

Frosting:


Grab a bowl and cream the butter with a mixer. Add the vanilla and 1/4 cup of the jello.

Mix the half and half and orange soda together in a different bowl. (If you don't do this in its own bowl, it won't work with the frosting!)

Slowly add in the powdered sugar 1 cup at a time and add in a little bit of the liquid bowl mixture in between each cup of sugar.

Mix for 1 minute. It should be nice and creamy. Add in food coloring if you want it.

Add to the piping bag and frost the cooled cupcakes. Put in a straw if you have it.
