Although a cosmopolitan cocktail (or fun mocktail)  is usually made with a splash of cranberry juice, I wanted to go a sweeter route with this cosmopolitan cupcake recipe and opted for a homemade cream soda syrup instead.

I made the cream soda syrup by simply boiling down a few cups of cream soda until it had reduce in volume by half. This syrup is delicious added to drinks, poured over top of ice cream, or incorporated into baked goods like these! Of course, you can make your own syrup from scratch using vanilla, water, and sugar but I wanted to keep that bright pink colour from the store-bought cream soda.

I followed the same method that I used to make our Coca-Cola Cupcakes and simply added the boiled down cream soda to a box of white cake mix. I love the pink colour of the cake that resulted, and you could even get away with calling these pink velvet cupcakes!

For the frosting, I used my standard buttercream frosting recipe but replaced the vanilla with this cream soda syrup. It resulted in a subtly softer frosting with a great cream soda taste. I can’t for you to try this cake mix recipe.  It’s one of my favorite simple dessert recipes!
