This is one of my sugar cookie recipes. The mixture of the butter and cream cheese create such an amazing and smooth texture. Once you cut out sugar cookies from the dough, the fun really begins!
Grinch Cream Cheese Sugar Cookies
Once you roll the dough and get ready to bake the cookies, you’re well on your way to making this easy cookie recipe. Adding the icing on top creates a nice crisp texture to the top once it dries. The green coloring and the little heart is what gives these cookies that Grinch theme!
We like to make these cookies during the holiday season because they’re just perfect to pair up with a Grinch movie as well. You’ll want to grab one for each hand, they’re just that good!
Why won’t the cookie frosting harden?
You need to make sure that the cookies cool completely before trying to add the royal icing to the top. Once the cookies are at room temperature, it’s safe to add on the frosting and let it set. It should harden.

How do you store baked cookies?
Make sure that you let the cookies set on wire racks to cool down before storing. Once they’re cooled, you can add them to an airtight container at room temperature or even cover them with plastic wrap. The cookies will take about 20 minutes to cool down totally.

Grinch Cream Cheese Sugar Cookies
These simple sugar cookies are such a fun cookie to bake!
Ingredients
- 1 ½ cup of sugar
- 1 cup of room temperature unsalted butter
- 1 (8 ounce) package of room temperature cream cheese
- 1 room temperature egg
- ½ tsp almond extract
- 1 tsp vanilla extract
- 3 ½ cups of flour
- 1 tsp of baking powder
- ½ tsp of salt
Instructions
Cream the cream cheese and butter at medium speed.
Add in the egg, almond extract, and vanilla. Beat again until creamy.
In a different bowl, stir the baking powder, flour, and salt. Add this mixture to the butter mixture a little bit at a time and stir.
Shape the dough into the shape of a triangle and wrap it in plastic wrap. Put in the fridge overnight.
Preheat the oven to 375 degrees. Line baking sheets with parchment paper.
Roll out the dough to 1/2 inch thickness. Cut with the cookie cutter and put on the baking sheet. Bake for 8-10 minutes.
Let cool and decorate.
To have the frosting spread out on the cookie, you can warm the frosting for 30 seconds and stir. Then heat in 15-second intervals and stir. This should make the frosting thin enough to spread out.
