In fact, just to be on the safe side, you may want to make a double (or triple!) batch. Hands will be grabbing as soon as they’re cool enough to touch, and you don’t want to be left without anything on the dessert table.

Gingerbread man cookies are a holiday delight and should be a staple in every home. This is one of the reasons that I love sharing this recipe – so that you can make your own family traditions by baking them!

Gingerbread Cookies

Most people have had gingerbread cookies before at a family gathering or bought them from the store, but I’m always surprised to find out how many people have never actually baked them.

That is about to change! Not only does this recipe prove that anyone can be a baker in the kitchen, but it proves that you can make totally cute and delicious cookies on your very first try. C’mon, these cookies are adorable! Almost too adorable to eat. Almost.

My boys always know that I’m in the holiday spirit when I bring out this recipe – and they couldn’t be happier to help. We all have something in the kitchen that we like to do, and we work together to do it.

That’s because the sooner we can make and bake cookies, the sooner we can eat them! If that’s not motivation, I don’t know what is!

Why does my brown sugar have lumps in it?

It might look unpleasant, but don’t panic. This sometimes happens if there is air or moisture that gets into the sugar.

You can easily fix and get rid of those lumps quickly by popping the brown sugar in the microwave. Heat it up for about 10-15 seconds, and then break up the clumps of sugar.

It’s still fine to use, and then you don’t have to worry about anyone chomping down on a cookie and biting into a big lump of sugar!

Can I freeze already-baked cookies?

Yes, you can put cookies that are already baked in the freezer. This is a great way to meal prep and saves some cookies for later.

Just make sure that you let the cookies cool down all the way before adding them to a freezer bag or airtight container. Once you’re ready to eat them, you can move them to the fridge to thaw overnight.

Can I add frosting to these cookies?

Yes, you can add frosting and decorations! All you need to do is make your own frosting or buy some at the store, and then add on sprinkles.

Yes, you can! You’ll just want to bake them in squares and triangles instead of cookie shapes. You’ll also need to bake them longer at 14-16 minutes, instead of 8 minutes, as the recipe is written below.

Gingerbread Cookies

These gingerbread cookies are a holiday classic dessert! Perfect for holiday baking!

Ingredients

  • 1/2 cup unsalted butter, softened
  • 3/4 cups light brown sugar, packed
  • 2 tbsp + 2 tsp molasses
  • 1 egg
  • 2 1/2 tsp of cinnamon
  • 1 tsp of allspice
  • 1/2 tsp of ground ginger
  • 1/4 tsp of salt
  • 3 cups all-purpose flour, leveled

Instructions

Preheat the oven to 350 degrees. Add parchment paper to baking sheets.

Cream the butter and sugar together with a mixer.

Once mixed, stir in the spices and salt.

Then add the flour, one cup at a time, and stir after each cup.

Be careful and add only the flour until it's pulling away from the side of the bowl and forming a ball.

Roll the dough out on a floured surface. It should be about 1/4 inch thick. (you can use cookie cutters and cut out shapes if you want)

Bake in the oven for 8-9 minutes. Let the cookies sit on the baking sheet for 4-5 minutes, and then move them to a cooling rack.
