Using a muffin mix is one little secret that I’m happy to share. Everyone will obsess over the flavor and taste, and it’s up to you to let them know how simple the pancakes were.

My boys help me in the kitchen, so they know the muffin mix hack. Judging by the fact that there are never any pancakes left, I’d say they’re fine with it!

You can also change the flavor of the muffin mix to strawberry and make a big giant stack of strawberry pancakes, too! So many fun options!

How do I cook perfect pancakes?

Who doesn’t love a plate of pancakes? They’re a delicious treat!

If you’re new to cooking them, it takes some practice to get the technique right. Luckily, there are some easy tips to follow when making perfect pancakes every time. Start by stirring together your ingredients in a mixing bowl.

Heat the skillet, and then pour the batter onto the hot skillet. (I like adding butter to the skillet for non-stick flavor!)

Once bubbles start forming on the surface of the pancake, it’s ready to flip!

After you’ve served up pancakes for breakfast, there may likely be some leftovers! To ensure that you can enjoy them again later, freezing them is the way to go.

To freeze your leftovers, stack the pancakes between layers of parchment paper, wrap them in plastic wrap or foil, and place smaller stacks inside freezer-safe containers or bags before placing them in the freezer.

Ingredients

  • 1 Blueberry Muffin Mix Package
  • 1/2 cup Milk
  • 1 Egg

Instructions

  1. Mix the muffin mix, milk, and eggs with a whisk in a bowl.
  2. Let the mixture sit for 5 minutes.
  3. Put a skillet on the stove on medium-heat and add nonstick spray or butter.
  4. Once the skillet is hot, add 1/4 cup of the pancake batter.
  5. Let the pancake cook for 2 minutes on one side until there are bubbles popping, and then flip and cook another 2 minutes.
  6. Remove the pancake, and repeat with the rest of the pancake batter.
