Back to this amazingly tasty edible cookie dough recipe. It’s super easy to make and look at all those mini marshmallows and mini chocolate chips–isn’t that just a wonderful sight?!
And the cookie dough is so light and fluffy, it’s like the little cloud holding the marshmallow bits together with just butter, brown sugar and love. I can’t wait for another batch. LOL!
How to Make Edible Smores Cookie Dough Balls
You have to be careful when you make edible cookie dough to make sure the flour is heat treated to kill any weirdness that might be in there. I mean, surely you’ve seen the label on flour containers? Says something like “bake before you sneak a bite” or something–that’s totally a real thing.
So, I like to add flour to a pan and put it over medium heat for about 5 minutes, although I’ve heard other people say you can put it on a baking sheet and bake it at 350 degrees for a bit. Either way, kill the oogies, right?
Once that’s done, I combine about 1/2 cup of brown sugar and 1/2 cup of granulated sugar to the butter and vanilla in my stand mixer and cream those together.
I add in the flour I cooked and then a little milk at a time until it looks like the consistency of cookie dough.
You do that, then add in your mallow bits, chocolate pieces (no need to melt the chocolate) and crushed graham crackers and you’re ready for it to set-up in the fridge. 15 minutes later and you’re ready to snack!

No rolling pin, no baking, no muss. I love it.
Now, one last thing, you can make this gluten-free by just subbing-in gluten free flour, but be careful to ALSO get gluten-free graham crackers, or you’re wasting your time.

- I like using larger marshmallows sometimes, but these Mallow Bits are my preferred fluffy bite.
- Mini Chocolate Chips make for better bites than big ‘ole chunks in cookie dough.

Edible S'mores Cookie Dough
These Edible S'mores Cookie Dough Balls are perfect for those days that just call for sitting down and eating some cookie dough. Comfort food at it's finest--and you didn't even have to bake. That's what I call a win.
Ingredients
- 1 1/2 C all purpose flour
- 1 stick salted butter, softened
- 1 teaspoon vanilla extract
- 1/2 C packed light brown sugar
- 1/2 C white sugar
- 2 tablespoons milk
- 1/4 C chocolate chunks
- 1/4 C mini marshmallows
- 1/4 C chopped graham crackers
Instructions
- Sift flour into a large pan.
- Heat over medium flame for 5 minutes, stirring often.*
- Set aside to cool.
- Meanwhile, chop graham crackers into small pieces, about the size of the marshmallows.
- In the bowl of a stand mixer with a whisk attachment, add softened butter and whip for 10-15 seconds.
- Add vanilla and both sugars, and mix until combined, about 15 seconds.
- Add flour and beat until combined.
- Add milk, a little at a time until it resembles cookie dough.
- Fold in chocolate chunks, marshmallows and graham crackers.
- Refrigerate for 15 min.
- Serve.
Notes
*When you make edible cookie dough, you want to make sure to heat the flour to kill any germs. Others have mentioned online that you can also put flour on a baking sheet and bake for 5-7 minutes at 350?
