This Easter Coffee Cake Recipe is perfect for brunch, breakfast, and any time of the day!
Ingredients
- 2 large eggs, slightly beaten
- 1 cup vegetable oil
- 1¼ cups milk
- 1 tablespoon vanilla extract
- 3 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1¼ cups packed light brown sugar
- 1 tablespoon ground cinnamon
- 4 tablespoons melted unsalted butter
Instructions
Preheat the oven to 350 degrees. Grease a 9X13-inch pan.
Add the eggs, oil, milk, and vanilla to a large mixing bowl.
Blend the sugar, flour, baking powder, and salt in a different bowl.
Add the dry ingredients to the wet ingredients and mix. Pour 1/2 of the cake batter into the baking dish.
In a bowl, mix the cinnamon and the brown sugar.
Drop six scoops of the sugar mixture onto the cake mixture.
Use a butter knife and make swirls with the sugar mixture.
Melt the butter and add to the rest of the sugar mixture. Using your fingers, sprinkle the sugar mixture on the rest of the cake.
Put the cake in the oven and bake for 35-40 minutes.

So, after it says use a butter knife and make swirls with the sugar mixture, you then pour in the second half of the cake batter, before it says to melt the butter and add to the rest of the sugar mixture. So, it is on the top of the coffee cake, you are actually using your fingers, for sprinkling the sugar mixture on the rest of the cake before putting into the oven, right? Thank you.
Correct. You are making the sugar mixture to sprinkle on top with the melted butter and sugars, and you add that onto the top of the cake batter, using your fingers. You then put it into the oven to bake.
Made this yesterday. But I folded in 2 cups of frozen blueberries into the batter, and it came out fantastic. Had to bake for 45 minutes. This one is a keeper. Thank you.
