Since we’re also making the dressing, you can be confident that this recipe tastes fantastic. The apple cider vinegar paired with the lemon flavoring is one of the best things out there! Forget about store-bought dressing – and make your own!

My boys are not huge salad fans, but they LOVE this one. I think it’s the fact that it’s a bit sweet, which always speaks to their tastebuds.

I make this salad all year long, but I can promise you that if you can make it when the strawberries are in season, the taste will be out of this world!

What is the best way to clean and dice fresh strawberries?

The best way to clean and dice fresh strawberries is by gently rinsing them with cold water.

Once the excess dirt and debris are removed, a chef’s knife can carefully slice off the stems and cut each strawberry into small pieces.

The pieces should then be spread over a paper towel or clean kitchen towel to allow them to dry thoroughly before adding to other ingredients such as salad dressings, pancakes, or smoothies.

This method will ensure that the strawberries are crisp, flavorful, and safe to consume.

This simple salad with strawberries is a light and balanced recipe! Perfect for a healthy dinner idea!


  • 6 ounces spring mix lettuce
  • 1 ½ - 2 cups chopped strawberries
  • 1 cup blueberries
  • ¼ cup red onion, sliced or chopped
  • 1 medium cucumber, chopped
  • ⅓ cup goat cheese (more or less to taste)
  • ½ cup pecans


  • 1 cup fresh strawberries
  • 2 tablespoons lemon juice
  • 1-2 teaspoons lemon zest
  • 2 tablespoons apple cider vinegar
  • ¼ cup sugar
  • 2 tablespoons olive oil
  • 1 teaspoon poppy seeds


  1. Add all dressing ingredients into a blender and mix until it is thin and liquid.
  2. Add the spring lettuce to a large bowl, and then add the toppings. Fold and mix.
  3. Drizzle with the homemade dressing, and serve.
