Ingredients
- 6 ounces spring mix lettuce
- 1 ½ - 2 cups chopped strawberries
- 1 cup blueberries
- ¼ cup red onion, sliced or chopped
- 1 medium cucumber, chopped
- ⅓ cup goat cheese (more or less to taste)
- ½ cup pecans
Dressing
- 1 cup fresh strawberries
- 2 tablespoons lemon juice
- 1-2 teaspoons lemon zest
- 2 tablespoons apple cider vinegar
- ¼ cup sugar
- 2 tablespoons olive oil
- 1 teaspoon poppy seeds
Instructions
- Add all dressing ingredients into a blender and mix until it is thin and liquid.
