The boys really like that each bite has a balance of sweetness to it, and I’m happy to see them filling their bellies and digging in!

Sweet chicken dishes pair especially well with contrasting flavors that can bring out the sweetness without being too overpowering.

Arugula salad with a lemon vinaigrette is a great way to cut through the richness of the main dish while still keeping it light.

For an extra punch of flavor, add in some roasted butternut squash and sweet onions to brighten the overall experience.

This Tropical Chicken Dinner Recipe is a great way to create a comfort food dish everyone will love and enjoy.

Ingredients

Pineapple Chicken Ingredients:

  • 8 chicken breast tenderloins
  • Salt & pepper
  • 2 tablespoons melted butter
  • 1 cup pineapple juice
  • ½ cup chicken broth
  • ¼ cup brown sugar
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon sriracha sauce
  • 1 teaspoon garlic powder
  • ½ teaspoon ginger powder
  • 1 cup can of drained pineapple chunks
  • 1 cup crushed pineapple
  • 2 tablespoons cornstarch
  • 1 red bell pepper, chopped
  • 1 red onion, chopped
  • ½ teaspoon sesame seeds - garnish
  • 2 tablespoons parsley - garnish

Coconut Rice Ingredients:

  • 1 cup basmati rice
  • 1 cup coconut milk
  • 1 ½ cups water
  • ½ teaspoon of sea salt
  • ½ cup unsweetened coconut
  • 4 greens onions, chopped

Instructions

  1. Add pepper and salt to the chicken and place it in the slow cooker.
  2. Mix the melted butter, pineapple juice, brown sugar, chicken broth, soy sauce, honey, apple cider vinegar, sriracha, garlic powder, ginger, and pineapple in a bowl. Mix well and then pour over the chicken.
  3. Cook on low for 5 hours.
  4. Take the chicken out of the crockpot and set it aside.
  5. Add the cornstarch and 1/4 cup of water into the slow cooker.
  6. Stir in the onion and bell pepper.
  7. Put the chicken back into the crockpot and cook for 1 more hour on high until the sauce thickens and the added veggies are tender.
  8. Add water, coconut milk, and salt to a pan and boil to make the rice.
  9. Stir in the rice, and reduce the heat to low. Cook until the rice is tender.
  10. Take off the heat and stir in the coconut and green onion.
