How do I store leftover coffee cake?

When storing leftover coffee cake, it is essential to take precautions to maintain freshness and enjoy the best taste.

As soon as the coffee cake is cool enough to handle, it should be wrapped tightly and stored in a plastic container with an airtight lid. Due to the cream cheese, it needs to be stored in the fridge.

It is not recommended that coffee cake be stored in the refrigerator for more than three days as moisture can cause spoilage of the bakery product.

Also, freezing coffee cake is an option but no longer than one month due to possible freezer burn or ice crystallization damage.

The most crucial aspect of preserving coffee cake is ensuring a good seal so that neither moisture nor air enters the container where it is stored; sogginess can set in rather quickly if this precautionary measure is neglected.

This Raspberry Cream Cheese Coffee Cake is addictive! You've been warned!

Ingredients

  • 1 cup softened room temperature butter
  • 1 1/4 cup granulated sugar, divided
  • 1/4 cup almond paste
  • 1 teaspoon vanilla 
  • 3 room temperature eggs
  • 3/4 cup sour cream 
  • 4 cups flour 
  • 1 1/4 teaspoon baking soda 
  • 1 1/4 teaspoon baking powder 
  • 1 1/2 cups fresh raspberries, divided 

Cream Cheese Filling

  • 8 ounces of softened room temperature cream cheese
  • 1/2 cup granulated sugar
  • 1/4 teaspoon almond extract

Instructions

  1. Preheat the oven to 350 degrees.
  2. Cream the butter, 1 cup of sugar, and almond paste.
  3. Add the vanilla, eggs, baking powder, and baking soda.
  4. Fold 1/2 of the raspberries into the batter.
  5. Make the cream cheese filling by mixing 1/2 cup of the sugar and the almond extract with the cream cheese.
  6. Spray the bundt pan with nonstick spray, and then add 1/2 of the raspberries onto the bottom.
  7. Put 1/2 of the cake batter into the pan and make a dent in the center. Add the filling in the dent, and then top with the rest of the cake batter. Smooth batter to even it out.
  8. Put the pan in the oven and bake for 50-55 minutes.
  9. Take the pan out of the oven and let it cool on a wire rack for 30 minutes.
  10. You can then take the cake out of the pan and put it onto a cake plate.
  11. Add a glaze of powdered sugar mixed with lemon juice or milk on top. Slice and serve.
