The best part about baking blondies is getting to mix together all the ingredients. I love adding in the raspberries and the white chocolate to see how pretty they swirl together and look.

Our household loves blondies. So much so that we just can’t get enough of that chocolate flavor and taste. Pair these up with a nice cold glass of milk and you’ve got yourself quite the tasty snack.

Can you use frozen raspberries in this recipe?

I wouldn’t, no. The reason being is that as the frozen raspberries thaw, they’re going to release moisture into the dessert. This can cause your blondies to not bake properly and maybe never even set up at all.

What is the difference between brownies and blondies?

The simple reasoning behind the difference is the coloring of the two. Blondies are light or vanilla looking and the brownies are darker and more chocolate colored.

Raspberry White Chocolate Blondies

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

These Raspberry White Chocolate Blondies are so much fun to make and taste amazing!

Ingredients

  • 2 - 5oz Ghirardelli white chocolate bar, chopped
  • 2/3 C unsalted sweet cream butter, cut into cubes
  • 1 C sugar
  • 4 large eggs
  • 2 tsp pure vanilla extract
  • 1 1/2 C and 4 tbsp flour
  • 1/2 tsp kosher salt
  • 2 C fresh Raspberries
  • 1 1/2 C white chocolate chips

Instructions

    Start by preheating the oven to 350 degrees. Next, take and line a 9x13 baking dish with your parchment paper.

    Now it's time to use a double boiler and place the white chocolate and butter into the top part of the double boiler to start the melting process.

    Keep whisking until melted and totally smooth.

    Once it is melted, take and move the mixture into another large bowl. Then whisk in the sugar until it is combined and smooth.

    Next you're going to whisk in eggs. Add them one at a time until it is well-combined after each egg.

    Once that is done, take and mix in the vanilla extract.

    Grab a large bowl and whisk together the flour and salt until mixed well.

    Slowly whisk in the dry ingredients into the wet mixture until combined really well without lumps.

    Next, take and fold in the 1 cup of raspberries and 1 cup of white chocolate chips.

    Once that is done, take and pour the batter into the baking dish carefully.

    Place the remaining 1/2 cup of raspberries and 1/2 cup of white chocolate chips onto the very top of the mixture.

    Put in the oven and bake for 20 minutes, or until the top is golden brown in color.

    Take and cover pan with foil and bake it for another 5 minutes.

    Once done, take out of the oven and allow to cool completely before cutting and serving.
