peaches and blackberries in a light cake recipe

This golden brown cake is one of my favorites. I’ve always been a fan of upside-down cakes, but the blackberry and the peach take it totally over the top.

Blackberry Peach Upside Down Cake Recipe

The best part about this simple cake recipe is that it’s not really all that hard to make. Once you combine your melted butter with the rest of the needed ingredients, you’ll be shocked to see that you’re almost done and through with the prepping.

In our house, the cake doesn’t last very long at all. It’s a good flavor and it’s something that sometimes, we actually eat BEFORE anything else in our house. (that’s the perk of being a parent!) My boys love the little splurge here and there and this is one of their favorite flavors.

How do you know when this cake is done cooking?

The easiest way to know it’s done is that that toothpick that you enter into the center comes out clean.

This is a test that proves itself each and every time.

  • • 1½ c milk
  • • 3 lg eggs
  • • 1¼ c granulated sugar
  • • 1 tbsp vanilla extract
  • • 2½ c all-purpose flour
  • • 1½ tsp baking powder

1.Start by taking a 12-inch iron skillet and melting 1½ stick of butter. Next, go ahead and add in the brown sugar, stirring constantly until it starts to bubble and is well-combined.
2.Next, put the blackberries and peaches over the brown sugar mixture in your skillet or pan. Set aside.
3.Start by blending together the flour, baking powder, and granulated sugar. Once done, set aside.
4.Next, you're going to mix in 1½ sticks butter on medium speed until it's nice and fluffy.
5.Once that is done, take and add in the eggs, one at a time, one low speed after you add one.
6.Take your dry ingredients and add them to wet ingredients. Mix on medium speed until well combined.
7.Take and pour the cake batter over the fruit in the pan and put on the center rack of your preheated oven.
