Nothing is cuter at Easter time than these adorable Easter Bunny Cupcakes Recipe! Kids and adults will be delighted and charmed when you bring this treat to your next gathering. When it comes to Easy Easter Recipes, it doesn’t get better than this!

They look like basic cupcakes but adding lemon extract and grated lemon peel to the batter adds a spring-like flavor boost that pairs well with the toasted coconut. They’re still easy to make, with just a bit more pizazz than regular vanilla cupcakes.

Of course, if you’re not a lemon fan, leave it out. Prefer orange flavor? Use some orange extract instead. These cupcakes look complicated to make, but I promise they’re not.

We love to make homemade cupcakes as a family – and for a good reason. They’re festive, delicious, and perfect for all ages.

My boys love to add more toppings to these cuties, and I say go for it. What’s the point in eating cupcakes if you can’t pile high the toppings?

Make these for an Easter family celebration, brunch, or a fun dessert and snack. They’re addictively in cuteness and taste!

How do I know when the cupcakes are done baking?

Knowing when cupcakes are finished baking is important to ensure they come out perfectly moist and delicious.

A good way to tell is by sticking a toothpick or cake tester into the center of the cupcake; if there are no wet crumbs stuck to the tester, the cupcake has finished baking.

You can also give the cupcake a gentle nudge – if it springs back quickly and evenly from your fingertip, it is likely done.

Additionally, you can observe how much the top of the cupcake has domed; if it has risen unevenly or called deeply in some areas, bake for another few minutes.

Finally, do not rely solely on cooking times; all ovens vary, so use your best judgment!

What is the best way to freeze baked cupcakes?

Freezing baked cupcakes is a great way to extend their shelf life without sacrificing flavor. The best method for freezing these treats involves wrapping each cupcake individually with plastic wrap, aluminum foil, or airtight food wrap.

This seals in the moisture and helps prevent freezer burn.

Afterward, place the individually wrapped cupcakes into an airtight container or large resealable zip-top bag marked with the storage date.

Cupcakes can be stored safely for up to 2 months in a standard household freezer.

When ready to enjoy again, allow the frozen treat to thaw naturally overnight in your fridge before eating.

Ingredients
  

For the Cupcakes:

  • ¾ Cup(s) softened butter
  • 3 eggs
  • 2 ½ Cup(s) flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 ¾ Cup(s) sugar
  • 1 ½ Cup(s) milk
  • 1 tsp vanilla extract
  • 1 tsp lemon extract
  • 1 tsp grated lemon rind

For the Frosting:

  • 1 tub pre-prepared vanilla frosting any brand
  • 5-10 drops of green food coloring

Add-ons:

  • Shredded Coconut toasted in an 200 degree oven for 5 minutes watch carefully!
  • Bunny “Peeps” Candy

Instructions
 

  • Cupcakes:
    Cream the sugar and butter together until light and frothy, then add in eggs.
    Mix the flour, baking powder, and salt in a medium bowl.
    Add the flour mixture and the milk in alternating batches (about 1/2 cup of each at a time).
    Add the vanilla and lemon.
    Bake in a greased cupcake tin for 20 minutes at 375. I prefer to use paper baking cups in the tin because they'll come out more easily.
    Let cool.
  • Frosting:
    Mix frosting in a small bowl with the green food coloring until thoroughly combined. Set aside.
  • To Assemble:
    Frost cooled cupcakes with the tinted green frosting.
    Before the frosting dries, sprinkle the toasted coconut on top to make a "bed" for the bunny.
    Stick a toothpick through the bottom of the bunny, leaving about 1/2" sticking out of the bottom. Use this to stick the bunny so it will stay on its bed in the cupcake.
