This Chocolate Covered Pretzel Cupcakes Recipe is made using a boxed cake mix - and topped with chocolate-coated pretzels!
Ingredients
- Box Chocolate Cake + ingredients on the box
- 3/4 cup Pretzels
- 1 cup Salted Butter, softened at room temperature
- 4 cups Powdered Icing Sugar
- 1/2 cup Cocoa Powder
- 2-3 Tablespoons Milk
- 1 teaspoon Vanilla Extract
- 2 teaspoons Flaked Salt, this can be optional
- 18 Chocolate-Covered Pretzels
Instructions
- Preheat the oven according to the directions on the cake mix box.
- Add the cupcake liners to the cupcake pan.
- Make the cake mix as directed on the box.
- Crush 1/2 cup of the pretzels and divide them evenly among the cupcake liners. Add 1/4 cup of the batter to each liner.
- Put the cupcakes in the oven and bake as directed on the box.
- Let the cupcakes cool.
- To make the frosting, beat the powdered icing sugar, butter, cocoa powder, vanilla extract, and milk. Taste and adjust as needed. (you can add more sugar, milk, etc.)
- This part can be optional, but if you want to crush another 1/4 cup of pretzels into a fine powder and toast in a skillet for two minutes, this is a fun way to add a salted pretzel flavor to the frosting.
- Scoop the frosting into a piping bag with a large star tip on the end, and swirl the frosting on top of the cooled cupcakes.
- Add flaked salt and a chocolate-covered pretzel on top.
