These Chocolate Covered Cherry Cupcakes combine rich chocolate and luscious cherry flavors, making them an elegant and easy dessert for Christmas or Valentine's Day. Made with simple ingredients like cake mix and cherry pie filling, they're a festive treat sure to impress!
Preheat the oven according to the directions on the cake mix box.
Add the cupcake liners to the cupcake pan.
Make the cake mix as directed on the box.
Crush 1/2 cup of the pretzels and divide them evenly among the cupcake liners. Add 1/4 cup of the batter to each liner.
Put the cupcakes in the oven and bake as directed on the box.
Let the cupcakes cool.
To make the frosting, beat the powdered icing sugar, butter, cocoa powder, vanilla extract, and milk. Taste and adjust as needed. (you can add more sugar, milk, etc.)
This part can be optional, but if you want to crush another 1/4 cup of pretzels into a fine powder and toast in a skillet for two minutes, this is a fun way to add a salted pretzel flavor to the frosting.
Scoop the frosting into a piping bag with a large star tip on the end, and swirl the frosting on top of the cooled cupcakes.
Add flaked salt and a chocolate-covered pretzel on top.
