Ingredients
  

  • 2 Cup(s) of shredded zucchini this is about 3 zucchini
  • 1 egg
  • ½ Cup(s) of honey
  • 1 teaspoon vanilla extract
  • ½ Cup(s) of coconut oil
  • ½ Cup(s) cocoa powder (or cacao powder(
  • 1 Cup(s) flour
  • 2 teaspoons baking soda

Instructions
 

  • Shred the zucchini and add it to a colander. Ensure it is over the sink, so the excess water drips into it.
  • Preheat the oven to 375 degrees. Spray nonstick spray in a casserole dish. (8X8 in size)
  • Mix the egg, vanilla, honey, and coconut oil in a bowl. Beat in the cocoa powder and then set aside.
  • Mix the flour and baking soda in a smaller bowl.
  • Pour the flour mixture into the wet mixture, then fold the shredded zucchini.
  • Fold the mixture into the dish and put it in the oven. Bake for 22-25 minutes. A toothpick inserted should come out clean, showing that it’s done baking.
