Zucchini Brownies Recipe

I think that the first time I told my boys that I was going to make brownies out of zucchini, they looked at me like I had horns growing out of my head. But once they tried them, they discovered that mom wasn’t crazy!

The fun part about making these brownies is that they’re light, fluffy, and loaded with zucchini goodness. Since the zucchini breaks down during the baking process, you would never guess that there is zucchini added at all.

I’ve taken these to many fun potlucks and BBQs, and people are shocked when I tell them what they’ve eaten. I prefer these brownies to the over-the-top sweet ones because these have a nice and subtle sweetness instead because of the added honey.

How do I know when brownies are done baking?

You don’t want to overcook brownies! The good news is that there are indicators that you can look for so that you know that you’re not cooking them too much.

Once brownies are getting close to being done baking, you will notice that the edges are starting to pull away from the sides of the baking pan.

The top of the brownies should also not look shiny. The shininess should go away, and there should be a duller top.

Lastly, you can use a clean toothpick and stick it into the middle of the brownies. If the toothpick comes out clean, the brownies are done baking and ready to take out of the oven.

What are the best toppings for brownies?

I’m a toppings girl. I love taking desserts and making them different by adding a variety of toppings. Some are simple, but some are a little bit more out there!

The easiest topping to add to brownies is powdered sugar. You don’t have to go overboard. Just a little bit sprinkled on top goes a long way.

You can also melt chocolate chips and drizzle them on top, or heat some caramel and do that same thing.

Once you have something melted, you can add chopped nuts, shredded coconut, or even some mini chocolate chips.

Don’t forget that there is always room for sprinkles as well! Adding fun and festive sprinkles can quickly turn these brownies into fun holiday treats!

Zucchini brownies are the best way to make brownies with a twist! The kids won't even know that there is zucchini inside!

Ingredients

  • 2 cups of shredded zucchini (this is about 3 zucchini)
  • 1 egg
  • 1/2 cup of honey
  • 1 teaspoon vanilla extract
  • 1/2 cup of coconut oil
  • 1/2 cup cocoa powder (or cacao powder(
  • 1 cup flour
  • 2 teaspoons baking soda

Instructions

  1. Shred the zucchini and add it to a colander. Ensure it is over the sink, so the excess water drips into it.
  2. Preheat the oven to 375 degrees. Spray nonstick spray in a casserole dish. (8X8 in size)
  3. Mix the egg, vanilla, honey, and coconut oil in a bowl. Beat in the cocoa powder and then set aside.
  4. Mix the flour and baking soda in a smaller bowl.
  5. Pour the flour mixture into the wet mixture, then fold the shredded zucchini.
  6. Fold the mixture into the dish and put it in the oven. Bake for 22-25 minutes. A toothpick inserted should come out clean, showing that it's done baking.
