Instructions
Shred the zucchini and add it to a colander. Ensure it is over the sink, so the excess water drips into it.
Preheat the oven to 375 degrees. Spray nonstick spray in a casserole dish. (8X8 in size)
Mix the egg, vanilla, honey, and coconut oil in a bowl. Beat in the cocoa powder and then set aside.
Mix the flour and baking soda in a smaller bowl.
Pour the flour mixture into the wet mixture, then fold the shredded zucchini.
Fold the mixture into the dish and put it in the oven. Bake for 22-25 minutes. A toothpick inserted should come out clean, showing that it's done baking.
