Potluck Recipe: Loaded Baked Potato Casserole

Today’s pick is one that I would just put in a bowl and eat it all by itself for dinner.  I like it that much.  It is great as a side item and could be really good for you to take to Thanksgiving as well as a potluck dinner.  Here is what you will need:

 

Non-stick Cooking Spray (or you can rub some butter on the pan)

2 cans (12 oz.) of evaporated milk

2 cups of water

6 tbsp of butter or margarine

2 cups of sour cream

3 boxes (4.9 oz) of AuGratin potato mixes (any brand, even store brand)

1/3 cup of bacon pieces (imitation or real- small pieces)

1/2 cup of chives or green onions

1 cup of shredded cheddar cheese

 

Preheat oven to 350 degrees.

Combine evaporated milk, water, butter, potato slices and sauce mix that comes in the package over a medium heat in a large saucepan or pot.  As soon as it comes to a boil, remove it from the heat.  Stir in the sour cream and chives (or green onions).  Pour into a prepared 13×9 inch baking pan.  Then Sprinkle with cheese.

Bake for 40 minutes or until golden brown.

This picture is before I sprinkled cheese on, so you could see it better.  I had to make sure that I didn’t eat too much myself and that others got to try it.  I have a weakness for potatoes.  Yummy!!
