This Raspberry Chicken Salad Recipe is a fast and simple meal. Perfect for a quick lunch and dinner.

Ingredients

  • 4 cups of mixed salad green, washed
  • 1 pound of rotisserie or cooked chicken breast, sliced
  • 1 cup of fresh raspberries

  • 4 ounces of crumbled goat cheese
  • 
Salad dressing

Homemade Salad Dressing Ingredients: (optional)

  • ½ cup of lemon-flavored olive oil
  • 
¼ cup of white balsamic vinegar

  • ¼ tsp of cayenne pepper
  • 
¼ tsp of garlic powder

  • Sea salt and black pepper, to taste

Instructions

  1. If you make homemade salad dressing, add all the ingredients into a mason jar, cover, and shake to mix. Set aside.
  2. Divide the salad greens into four different bowls. Top with cooked sliced chicken breast, fresh raspberries, and goat cheese.
