I’ve made this easy salad recipe many times, and it’s always a huge hit! There’s no difficult part, and the flavor is crazy good.

My boys love when I make this recipe because they love picking up the skewer and eating the ingredients off one by one.

I love making it because it’s less messy and less clean up than I have to do. After all, I’m not having to wash as many dishes! It’s a win-win!

How do I know when cucumbers are ripe?

Cucumbers are a staple in many gardens and kitchens, but knowing when they are ripe can be tricky.

First and foremost, pay attention to the color. A ripe cucumber will be bright green with a slightly lighter shade at the tips.

This Greek Salad Skewers Recipe is a fast and simple appetizer. Delicious flavors!

Ingredients

  • 1 small organic cucumber, cut into 12 equal slices
  • 8 ounce Feta cheese, cut into 12 equal pieces
  • 12 grape or cherry tomatoes
  • 
12 large pitted black olives
  • Extra virgin olive oil
  • 
½ t. dried Italian seasoning

  • Sea salt and black pepper

Instructions

  1. Put the cucumber slices on a platter and add the Feta cheese on top.
  2. Press the wooden skewer through the cheese and cucumber and then add a tomato, followed by a black olive.
  3. Right before serving, drizzle with olive oil and sprinkle with the seasoning. Add salt and pepper and enjoy.
