This mini cheesecake recipe is a lot of fun to make. One of the biggest hurdles in our house is having to share desserts.

We all love desserts, but none of us like sharing our desserts. Having mini desserts means having our own and still getting the same flavors and taste.

My boys are on the mini food kick, so they love helping make this dessert. I’ll make the cheesecake mixture, and they’ll pour right onto the crust! Teamwork makes the dessert dream work.

As with any baking project, accuracy and consistency are two key ingredients when making cheesecake. To get the best results and a perfect cheesecake every time, attention to detail is key at each recipe step.

First, be sure to use exact measurements for your ingredients to ensure that everything is blended properly; too much or too little of one ingredient can affect the texture and taste of the final product.

Next, prepare your springform pan correctly; prepare it with parchment paper or butter so you get an even bake throughout the cake.

Finally, perhaps the most important step–when chilling your cheesecake in the fridge or freezer, allow enough time to cool completely before serving.

Why is my cheesecake sinking in the middle?

Cheesecake sinking in the middle is a common issue for many home cooks. The primary cause is often overbaking or excessive oven temperature, causing the outside of the cheesecake to firm up too quickly, leading to its collapse.

Overmixing can also result in a sunken center developing too much air within a single layer, resulting in an unstable structure.

Additionally, cheesecakes tend to rise while baking and then fall when cooling, so it’s best not to over-stir just before moving them from the oven to the countertop.

Mini cheesecakes are the perfect way to let everyone have their dessert! Use this easy cheesecake recipe to share the tasty joy this holiday season with all your family and friends.

Ingredients

  • 10 cacao biscuits
  • 2 tbsp melted butter
  • 1 block cream cheese
  • 1/3 cup eggnog
  • 1/4 cup sugar
  • 1/2 tsp vanilla extract
  • 1 egg
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • Whipped cream
  • m&ms
  • Melted chocolate

Instructions

  1. Preheat the oven to 350 degrees.
  2. Add the cookies and melted butter to the food processor, and then place the crumbs in the bottom of each liner.
  3. Whisk the cream cheese and sugar together until creamy. You can also use a mixer. Add the eggnog, vanilla, nutmeg, egg, and cinnamon to the mixture. Whisk.
  4. Divide the batter evenly in the liners, filling 3/4 of the way full.
  5. Put in the oven and bake for 20 minutes.
  6. Put in the fridge to chill for 2-3 hours.
  7. Whip the cream and 20 g of powder sugar.
  8. Add to the top of the cheesecake and add the M&M's.
