The choice is yours on how you want to make this vegan eggnog recipe. You can opt for an eggnog recipe no alcohol or you can add in a little bit of bourbon as well.

Eggless Eggnog Recipe

I love being able to use coconut milk to get a sweet and creamy texture in this recipe. The heavy cream makes for quite a texture difference, too.

Since I make this without the bourbon most times, the boys love having their own glass to drink and enjoy. Add a bit of cinnamon on top to take the flavor to a whole new level!

Do you need to add in instant pudding to this recipe?

You actually don’t. Some eggnog recipes call for it but this isn’t one of them. The whipping of the coconut milk and cream makes a creamy texture where a pudding mixture isn’t needed.

Can you use a different type of milk besides coconut milk?

Oat milk may be another great option for this recipe. You can also add some maple syrup to the mixture if you want to up the sweetness naturally.

If you don’t need it to be vegan, but just need to take out the egg you can use regular cow milk. Personally, I have an egg allergy. So, I avoid eggs as much as possible. But, I am not actually vegan.

  • Jokari Snap-On Can Strainer (1, A)
  • Farberware Classic Stainless Steel 2-Quart Covered Saucepan – 50002 – Silver
  • 48 oz Countertop Blender for Smoothies

Ingredients
  

  • 1 ½ cup of coconut milk
  • ½ cup of coconut cream
  • ¼ cupof raw cashew
  • 1/3 cup of granulated sugar
  • ½ tsp of vanilla extract
  • ½ tsp of ground cinnamon
  • ¼ tsp of nutmeg
  • bourbon optional

Instructions
 

  • Put all the ingredients into the blender, minus the bourbon. Blend until smooth.
  • Put a medium sized pot on the stove on medium heat and add the mixture. Bring to a boil and reduce the heat to low after that. You need to be whisking the whole time so lumps don’t form. Cook the mixture for about 10 minutes. Take off the burner and let it cool.
  • After it cools down, blend it again and pour through a strainer. Add in the bourbon (which is optional, of course!)
