- 3 tablespoons gelatin (3 packets)
- 2 cups of granulated sugar
- 1/2 cup of eggnog
- 1/4 cup of maple syrup
- 1 tsp of vanilla extract
- 1/2 cup of powdered sugar
- 1/4 cup of cornstarch
- Nutmeg to dust
- Add the water to a bowl. Sprinkle the gelatin on top. Set the bowl aside.
- Add the eggnog, sugar, and maple syrup to a saucepan over medium heat on the stove. Stir in the pan until the sugar dissolves. This will take about 4 minutes.
- Simmer the mixture until the candy thermometer reads 240 degrees F. This will take about 8-10 minutes, and the bubbles will not be popping as quickly)
- Pour that mixture until the water and gelatin mixture and whisk with your mixer on low.
- Once it's mixed, turn the mixer to high and beat until fluffy. It takes about 8-10 minutes.
- Put a little bit of nutmeg in, and then add the vanilla. Mix well.
- Add parchment paper to an 8X8-inch pan. Spray with nonstick spray and then pour the marshmallow mixture into the pan.
- Leave the mixture to set for 8 hours at room temperature.
- Once that time has passed, remove it from the pan and put it on a lightly dusted surface.
- Slice with a serrated knife.
- Combine the powdered sugar and cornstarch. Toss the marshmallows in the mix and then dust them with cinnamon or nutmeg.
