Instructions
Mix the muffin mix, milk, and eggs with a whisk in a bowl.
Let the mixture sit for 5 minutes.
Put a skillet on the stove on medium-heat and add nonstick spray or butter.
Once the skillet is hot, add 1/4 cup of the pancake batter.
Let the pancake cook for 2 minutes on one side until there are bubbles popping, and then flip and cook another 2 minutes.
Remove the pancake, and repeat with the rest of the pancake batter.
