I’ve made this easy brunch cake recipe more times than I can count, and I haven’t gotten tired of the flavor yet! Just consider yourself warned – it’s addictive!

Believe it or not, it’s not because there’s coffee in it (though sometimes there is!). The name comes from its long-standing friendship with, yep, you guessed it—coffee! These cakes were designed to pair perfectly with your morning or afternoon cup of joe.

Ingredients
  

  • 2 ¼ Cup(s) flour
  • 1 ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 8 ounces softened cream cheese
  • ½ Cup(s) softened butter
  • 1 ¼ Cup(s) sugar
  • 2 eggs
  • 1 Cup(s) mashed ripe bananas
  • 1 teaspoon vanilla

Topping Ingredients:

  • ½ Cup(s) softened butter
  • ¾ Cup(s) white sugar
  • Cup(s) flour
  • 1 teaspoon cinnamon

Instructions
 

  • Preheat the oven to 350 degrees. Spray a 9X13-inch baking pan with nonstick cooking spray.
  • Mix the flour, baking powder, and baking soda in a bowl. Mix well.
  • Add the cream cheese and butter to a mixer and beat until smooth. Add sugar and mix well.
  • Add the eggs, banana, and vanilla and mix well.
  • Add the dry ingredients and beat until just combined
  • Pour the mixture into a prepared pan.
  • In a different bowl, mix the butter, sugar, flour, and cinnamon. Use a pastry blender to mix everything together until pea-size chunks form. Sprinkle this on top of the batter that is in the pan.
  • Put the pan in the oven and bake for 40-45 minutes or until a toothpick inserted in the middle of the cake comes out clean.
  • Let the cake cool until warm before starting to cut. Slice into 15 pieces.
