Indulge in this banana coffee cake recipe, where sweet ripe bananas meet a buttery, crumbly topping for the perfect dessert or snack. This easy recipe is sure to become a family favorite with its moist texture and irresistible flavor!
Ingredients
- 2 1/4 cups flour
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 8 ounces softened cream cheese
- 1/2 cup softened butter
- 1 1/4 cup sugar
- 2 eggs
- 1 cup mashed ripe bananas
- 1 teaspoon vanilla
Topping Ingredients:
- 1/2 cup softened butter
- 3/4 cup white sugar
- 2/3 cup flour
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 350 degrees. Spray a 9X13-inch baking pan with nonstick cooking spray.
- Mix the flour, baking powder, and baking soda in a bowl. Mix well.
- Add the cream cheese and butter to a mixer and beat until smooth. Add sugar and mix well.
- Add the eggs, banana, and vanilla and mix well.
- Add the dry ingredients and beat until just combined
- Pour the mixture into a prepared pan.
- In a different bowl, mix the butter, sugar, flour, and cinnamon. Use a pastry blender to mix everything together until pea-size chunks form. Sprinkle this on top of the batter that is in the pan.
- Put the pan in the oven and bake for 40-45 minutes or until a toothpick inserted in the middle of the cake comes out clean.
- Let the cake cool until warm before starting to cut. Slice into 15 pieces.
