WOW! Work On It Wednesday

 WOW! Work On It Wednesday Let’s face it… everyone procrastinates at some point over certain things. What better way to get those things done than to let the whole world know that we haven’t done them? Personally, I always have things that have been on my to-do list for days. I end up either doing them REALLY late or scratching them out. That means I am not doing most of those dreaded tasks!

This is for the procrastinators like me! Simply post your WOW! list on your website and then enter the direct link to that post in my Mr. Linky. What is a Weekly WOW!? It is your Work on it Wednesday list of a few things that you have put off for way too long and simply must cross off of that to do list. I suggest only 2 or 3 items on your list and definitely not over 5… if you have too many, you aren’t going to get them done anyway!

Lucky for me, this is one of my procrastinated tasks… setting up a weekly series on my blog. So, I already have one that I can mark out… HA HA! Go, Kelli
My WOW! List:
1. Set up weekly series on my Blog
2. Spring Clean my closets
3. Get my manual re-vamped to fit my new schedule

RECIPE: Onion Mashed Potato Casserole

This was really yummy!!! We ate it with the Saucy Parmesan Chicken.

8 medium potatoes, peeled, cut into chunks and boiled for approx 10 minutes.
1 envelope Lipton Onion soup mix
1/2 cup milk (I use 2%)
1/2 butter or margarine (I use Country Crock with calcium)
1/2 – cup shredded 4-cheese Mexican cheese

Preheat oven to 350 F.

Mash potatoes, adding all ingredients except cheese. Transfer to casserole dish sprayed with non-stick cooking spray. Sprinkle top with cheese and bake approx 20 minutes.

Saucy Parmesan Chicken

Our supper last night was really good! So, I am posting the recipe here for you guys.

makes 4 servings:
4 small boneless skinless chicken breast halves (1 lb)
1/4 cup Light Zesty Italian Dressing
1/4 grated parmesan cheese
Salt, pepper, garlic to taste

Place all ingredients in a large resealable bag; seal bag. Turn over several times to evenly coat chicken with dressing and cheese.

Refridgerate 30 min to marinate, laying bag flat so chicken pieces do not overlap in bag.

Preheat oven to 425 F. Remove chicken from bag and discard marinade. Arrange Chicken in baking dish. Bake 20 minutes, or until cooked through. ** I actually had to do 40 minutes, so prepare for that.
