So, I love a good easy recipe. And there’s nothing easier than this 3-ingredient Velveeta chili cheese dip recipe.
How to Make Velveeta RoTel Chili Cheese Dip
Preheat your oven to 350 degrees.
Lightly spray a baking dish with cooking spray. This is going to help keep the hard crusty bits from sticking to your baking dish. Trust me, it’s a good idea.
Combine chili (no beans) and Rotel diced tomatoes and green chilies in a large bowl. Stir a bit, because it’s nice.
Fold in the cheese cubes. No need to try to really mix it up or anything. Just get the liquid kind of around the cheese.
Place the mixture into the baking dish.
Bake the dip for 15 to 20 minutes, stirring about halfway through. At the halfway point, usually the Velveeta is completely melted, but if it’s not, you can bet it will be by the time it’s been in the oven for 15 minutes.
Once the cheese is melted and it’s all nice and hot, remove from the oven and serve!
Alternatively, this is a microwave safe recipe. If you just pop the ingredients into a medium microwaveable bowl and microwave on high 5 min, stirring after 3 min.
If the cheese product isn’t melted yet, you can microwave it for an additional 3 minutes, just be sure to stir it frequently.
I sometimes make a double batch because I want to make sure I get some Velveeta chili dip for myself. Which is kind of a big thing for me, because those kids–they love dip.
Because, at the end of the day, you’re getting ready for people to come over or for the game to be on, and you don’t want to be spending all day in the kitchen–you’ve got other things to do!
