RECIPE: Onion Mashed Potato Casserole

Onion Mashed Potato Casserole is a recipe of cheesy, onion, goodness that everyone is sure to love!  This can be made with real potatoes or you can alter the recipe a bit to use boxed mashed potatoes instead.  Either way, it is a delicious and filling side dish that is perfect for any meal.

Just a tidbit of advice here:  If you have picky kids, be aware – this stuff doesn’t look all that great because the Lipton turns the potatoes into a tan/brown color.  However, once I convinced my boys that it was really good, they LOVED it. 🙂  We like to serve this with Saucy Parmesan Chicken, the flavors compliment each other very well!

 

Psst: I just love the small candy/trifle bowl that I found at Goodwill. 🙂

Onion Mashed Potato Casserole

Prep Time: 20 minutes
Cook Time: 20 minutes
Total Time: 40 minutes

Onion Mashed Potato Casserole is a recipe of cheesy, onion, goodness that everyone is sure to love!

Ingredients

  • 8 medium potatoes peeled, cut into 1 inch chunks and boiled for approx 10 minutes.
  • 1 envelope Lipton Onion soup mix
  • 1/2 cup milk I use 2%
  • 1/2 stick butter or margarine I use Country Crock with calcium
  • 1/2 - cup shredded cheddar

Instructions

    Preheat oven to 350 F.
    Mash potatoes, adding all ingredients except cheese. Transfer to casserole dish sprayed with non-stick cooking spray. Sprinkle top with cheese and bake approx 20 minutes.

    Yummy! I never thought about adding a Lipton’s soup mix to Mashed potatoes. Great recipes. I will add this one to my file!
