Shrimp RoTel Dip Recipe
Shrimp and gooey cheese, is there anything that could be any more delicious than that? I didn’t think so either. This is why one of my favorite dips is the Shrimp RoTel Dip Recipe which combines both of those along with RoTel Tomatoes.
The gooey goodness of Velveeta cheese is the perfect mixture of shrimp and RoTel. It almost sounds too good to be true. Luckily, this is a reality. We actually make quite a few dips in our house because they’re fast and simple. This is one of our favorites!
Combining these three delicious ingredients will make you an easy RoTel recipe that everyone will be begging for time and time again. Once you learn how to make shrimp Rotel, its a game-day dip game changer, for sure!

Shrimp RoTel Cheese Dip
Equipment
Ingredients
Shrimp
- 6 oz Water
- 2 Pound(s) 32 ounces Shrimp
- 1 ½ teaspoon salt
Dip
- Original RoTel 10 oz
- 2 Pound(s) 32 oz Velveeta Cheese
- Prepared Shrimp
Instructions
Prepare the Shrimp:
- If you use a package of precooked salad shrimp, they are ready! Just drain them.
- If, however, you buy or catch fresh shrimp, they will need to be cooked and most likely chopped.
- Boiled or steamed works just fine. De-head, de-shell, and de-vein them. Then, chop them into small pieces.
Prepare the Dip:
- Cube Velveeta into large microwavable bowl.
- Add RoTel
- Microwave on high, stirring every 30-60 seconds until all the cheese is melted. Be very careful that you don't burn it.
- Add in the prepared shrimp, stir well.
- Serve with Tortilla chips.
Notes
- I like to liquefy the RoTel in my food processor before adding it to the Velveeta, but it isn't necessary.
