Valentine Strawberry Cake Mix Cookies

These Valentine Strawberry Cake Mix Cookies are too adorable and are sure to be a hit with your tween girls… betcha!  What girl doesn’t like chocolate pink cookies? And I love having this recipe to add to my list of yummy cookie recipes!

Heck, I bet my boys will be all too happy to eat them, as well. LOL!

Seriously, these Valentine cake mix cookies will be a hit at the next class party.  Plus, since they are an easy cake mix recipe, they don’t include too many ingredients.

That means, you got it, easy for Mom!

While we planned this easy recipe for Valentine’s Day, they would also be adorable at a little girl baby shower.  They are just strawberry cookies with chocolate hearts – so, they would be good for any event that needs pink cookies.

In fact, they kind of taste like chocolate covered strawberry cookies – no food coloring necessary!

Chocolate Hearts – We made our own using edible gold flakes, chocolate, and a heart mold. But, the next time I will cheat and just use some Hershey chocolate hearts. 🙂

Strawberry Cake Mix – I am not real particular about brand. Get whatever you prefer – or whatever is the cheapest. 🙂

Cookie Sheets:  I know I sound like a brand snob, but I really love these Wilton Cookie Sheets.  I have had them for nearly 20 years and they are still going strong. That is a big seller for me.

Parchment Paper: This stuff is a game changer for a baker.  Here’s a tip for those that hate it slipping all around: put a small dab of butter on your cookie sheet.  Then, place your parchment paper down. The parchment will stick a bit to the butter, causing it to stay still while you put your circle shape dough down.

Measuring Cups:  A baker worth her salt knows that a good set of measuring cups is a must!

You can’t have just cookies at your Valentine’s Day event, you have to have multiple goodies!

Strawberry Cake Mix Cookies w/ Candy Hearts

Yield: 12 cookies
Prep Time: 10 minutes
Cook Time: 8 minutes
Total Time: 18 minutes

Ingredients

Ingredients:

  • 1 box of strawberry cake mix, any brand (I used Pillsbury)
  • 1/3 C. vegetable oil
  • 2 eggs
  • 2 tbsp flour
  • 1/4 C. Valentine sprinkles
  • 12 Wilton candy hearts

Instructions

Directions:

  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper or use a silicone baking mat.
  2. Combine the strawberry cake mix, vegetable oil, eggs and flour.
  3. Add in the Valentine sprinkes.
  4. Use a small cookie scoop to roll the cookie dough into 2" balls and place on the baking sheet 2-3" a part.
  5. Bake 8-minutes.
  6. Remove from the oven, let cool a few minutes and gently press one candy heart on top of each cookie.
