Instructions to Make Strawberry Hot Cake

Start by beating the eggs at high speed until they become thick and pale. This step helps create a light base for your strawberry hot cake and is key to achieving that soft texture.

Gradually add the sugar while continuing to beat, until the mixture becomes fluffy, then mix in the vanilla. In a separate bowl, combine the flour and baking powder, then slowly incorporate it into the batter at low speed to avoid overmixing.

In a small saucepan, gently heat the milk and butter just until the butter melts. Adding this warm mixture to the batter helps create a smoother texture and richer flavor. Mix just until combined.

Pour the batter into a greased baking dish and bake until the cake is set and a toothpick inserted into the center comes out clean. Allow the cake to cool before topping it with finely chopped strawberries and Cool Whip for the perfect finish.

Dessert Tips and Tricks

  • Preparing your strawberries ahead of time makes assembly quicker and helps the topping distribute evenly. Finely chopping them ensures each bite has a burst of strawberry flavor.
  • For an extra indulgent touch, serve this strawberry cake with slightly warmed fresh strawberries. It enhances the natural sweetness and pairs beautifully with the cool topping.

Troubleshooting Strawberry Hot Cake

  • If your cake seems dense, make sure the eggs were beaten long enough at the beginning. This step creates the air needed for a lighter texture.
  • If the top browns too quickly, loosely cover it with foil during the last few minutes of baking to prevent overbrowning while the center finishes baking.
