This chicken chili lime soup is delicious. It is easy to prepare, and while there are a lot of ingredients, each one adds to the levels of flavor you experience with every spoon full.
You can taste the chili running through the broth. The added veggies give it depth, and I love the addition o white beans to give a sense of creaminess.
And since my boys eat a ton, I always look for easy meals full of flavor. We love to make this soup recipe at least a couple of times throughout the year. It’s always a welcomed dinner that no one wants to miss.
How do I thicken soup?
Thickeners are an essential component of soup, as they can improve the consistency and give it a more desirable texture.
One simple way to thicken soup is to use a roux, a cooked mixture of flour and fat. Flour and fat can be heated in a saucepan until they become thick enough to whisk into the soup, creating a hearty, creamy soup that may contain lumps if not strained properly. (so be aware!)
Alternately, pureed vegetables or legumes can also serve as thickeners; blend pieces of vegetables like carrots, potatoes, or beans with the remaining ingredients for additional thickness and nutrition.
Keep in mind that if adding either of these ingredients, additional seasoning may also be needed for a proper flavor profile.
Lastly, homemade stock – consisting of bones, vegetables, and herbs -can provide depth of flavor while also thickening soups; this boiling process can last several hours before blending, so plan accordingly.

Instant Pot Chili Lime Chicken Soup
This Chicken Chili Lime Soup Recipe is easy to prepare and super tasty. It is guaranteed to become a firm favorite in your household.
Ingredients
- 2 lg. boneless, skinless chicken breasts
- 64 oz chicken broth
- 1/4 cup chives
- 15 oz diced fire roasted tomatoes (1 can)
- 15 oz diced tomatoes (1 can)
- 8 oz chilis (1 small can)
- 1 cup baby carrots sliced
- 6 small potatoes diced
- 15 oz white beans (1 can)
- 2 tbsp olive oil
- 2 cloves garlic (finely chopped)
- 1 tsp salt
- 1/4 tsp pepper
- 3 stalks celery (finely diced)
- 15 oz corn (1 can)
- chili lime rub (ingredients below)
- 2 limes (juiced - zest first and save zest for rub)
- 1/2 cup parmesan cheese
- 1/4 cup chopped cilantro (add extra for garnish if desired)
Chili Lime Rub
- 2 tbsp chili powder
- 2 tsp lime zest
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/4 tsp coriander
Instructions
1. Rub chicken with chili lime rub, 1/2 tsp salt, and 1/4 tsp pepper.
2. Heat olive oil in the instant pot and add chicken.
3. Saute on both sides until cooked through. Let chicken cool and shred
4. Return chicken to Instant Pot.
5. Add stock, lime juice, and all remaining ingredients. Seal Pot and cook on high pressure for 15 minutes; release pressure.
6. Pour soup into bowls and garnish with parmesan cheese and cilantro. Squeeze extra lime in if desired.
