Ingredients
  

  • 3- 1 Thick Pork Loin Chops slice the center to stuff
  • Salt and Pepper
  • 1 ½ tbsp Olive oil
  • 1 box Stuffing
  • ½ Cup(s) Cranberries
  • 2 large Apples
  • 1 medium sliced Red onion
  • 1 large thickly sliced Yam or Sweet Potato
  • 3 minced Garlic cloves
  • 1 tsp thyme

Sauce

  • ½ Cup(s) Apple juice
  • ½ Cup(s) Maple syrup

Instructions
 

  • Preheat the oven to 350 degrees.
  • Sear the pork chops in a skillet with a little bit of olive oil. Add salt and pepper.
  • Mix the stuffing with butter and water and cook on the stove top or in the microwave – whatever the package directions state.
  • Add the dried cranberries to the stuffing.
  • Put the stuffing in the pork chops.
  • Add the sweet potatoes, apples, red onions, and minced garlic on top of and around the pork chops.
  • Mix the maple syrup and apple juice together and then drizzle over the top of the other ingredients.
  • Cover the skillet with aluminum foil and bake for 45-60 minutes in the oven. Do this until the sweet potatoes are tender.
  • Remove from the oven, spoon a bit of the juice over the top, and serve.
