Instructions
Preheat the oven to 350 degrees.
Sear the pork chops in a skillet with a little bit of olive oil. Add salt and pepper.
Mix the stuffing with butter and water and cook on the stove top or in the microwave - whatever the package directions state.
Add the dried cranberries to the stuffing.
Put the stuffing in the pork chops.
Add the sweet potatoes, apples, red onions, and minced garlic on top of and around the pork chops.
Mix the maple syrup and apple juice together and then drizzle over the top of the other ingredients.
Cover the skillet with aluminum foil and bake for 45-60 minutes in the oven. Do this until the sweet potatoes are tender.
Remove from the oven, spoon a bit of the juice over the top, and serve.
