The combination of these ingredients really set the taste apart. Make certain that you carefully add in the blueberries and don’t overmix. Otherwise, you might end up with a totally blue bread because of the juice!
This bread is a huge hit in our house every time we make it. Our boys line up for this bread recipe once that smell from the oven hits their nose. (and I have to agree, it’s so good!)
How do you know when this bread recipe is done baking in the oven?
Once you’ve made up your batter and placed it in your prepared loaf pan, it’s time to pop it into the oven. Following the recipe below, you’re going to want to cook it for the allotted time. Then you’ll want to insert a toothpick into the center of the bread to see if it’s done cooking all the way.
If the toothpick inserted into the center comes out clean, it means that the bread is done and ready to be removed. If not, it needs more time to cook.

Can you use frozen blueberries in this recipe?
In my opinion, this recipe does matter if you use fresh or frozen blueberries. The fresh blueberries are going to come out the best since because they won’t be thawing and letting out a ton of juice.
Frozen blueberries can be used but just know that there is a chance that your bread will be soggier than normal because of the thawing of the berry. To help alleviate the issue of too much juice or water, make certain that you’re folding in the blueberries and not stirring them once you add them in.

Ingredients
- Bread Ingredients
- • 2 c all-purpose flour
- • ¼ tsp salt
- • 1 tsp baking powder
- • ½ tsp baking soda
- • 3 tbsp orange zest
- • ⅓ c water
- • 2 tbsp unsalted butter cut into small pieces
- • 1 large egg lightly beaten
- • 1 c granulated sugar
- • ½ c orange juice
- • ¾ c fresh blueberries
- Orange Icing Glaze Ingredients
- • 2 c powdered sugar
- • 3½ tbsp fresh orange juice
Instructions
Bread Instructions
•Start by preheating the oven to 350 degrees.
•Make certain to grease your loaf pan.
•Grab a large bowl, and combine the flour, sugar, baking soda, baking powder, and salt.
•Next, use a different bowl and mix together orange juice, egg, water, butter, and orange zest.
•Once that is done, take and stir the wet ingredients into the dry ingredients until mixed.
•Carefully fold in the blueberries.
•Once you've done that, take and pour into your greased pan.
•Put in the oven and bake on the center rack for about 1-hour or until a toothpick inserted in the center comes out clean.
•Allow to cool in the pan for 10 minutes, then remove and place on a cooling rack to finish cooling.
Orange Icing Glaze Instructions
•To make the glaze, take and mix the orange juice with the powdered sugar until combined. Be aware that this glaze is thin and is meant to drizzle on top. If you feel that it's too thick after making, just add in some orange juice to thin.
•Once done, take and drizzle over your cooled cake. Let it cool down before slicing.
