Instant Pot Cinnamon Swirl Cheesecake Recipe
Adding the melted butter and the other ingredients to the prepared pan is such a simple step. Since your Instant Pot does all the hard work, it’s literally just a wait and enjoy type of recipe.
My boys love when I make cheesecake but this is one of their favorites. The cinnamon that is swirled around on the top of the cheesecake adds an extra burst of flavor and a fun look!
How do you know when the cheesecake is cooked?
Once you follow the directions and remove it from the Instant Pot, you should notice a tiny bit of jiggle to the middle of the cheesecake, but not much. This is an indicator that it’s cooked and just needs to cool a bit to get set up.

You can! I’m always amazed at how easy it is to freeze. Just put it in a freezer-safe container and store it in your freezer until you’re ready to eat. Then move it to the fridge to unthaw and enjoy.

- 2 c.ups of crushed graham crackers
- 8 T of melted butter
- 3 t of brown sugar
- ½ t of cinnamon
- ½ cup of melted butter
- 2/3 cups of light brown sugar
- 2-1/2 T cinnamon
- 24 ounces of softened cream cheese
- 2/3 cups of granulated sugar
- ½ cup of sour cream
- 1 t vanilla extract
- 2 room temp eggs
Mix the graham cracker crumbs, cinnamon, brown sugar, and butter.
Spray the bottom and sides of an 8-inch springform pan.
Put the graham cracker mixture in the bottom and spread. Press down into the pan and also about 1/2 inch on the sides.
Put in the freezer.
Grab a medium bowl and mix the brown sugar, cinnamon, and butter. Set aside.
Grab a different bowl and mix the cream cheese and sugar at light speed. Add in the sour cream and vanilla and mix.
Put in the eggs one at a time and mix.
Pour 1/2 of the filling into the pan with the crust.
Scoop spoonfuls of the cinnamon mixture onto the filling. Swirl lightly with a butter knife.
Pour the rest of the filling on top.
Repeat with the cinnamon swirl.
Put 1 1/2 cups of water into the bottom of your Instant Pot.
Cover the cheesecake pan with foil and make certain to seal the edges.
Put the pan on the trivet and lower it into the pot.
Seal and set to high pressure and cook for 45 minutes.
