My family is always begging for instant pot cheesecake recipes and this is one that I just can’t say “no” to. The cheesecake filling and graham crackers crumbs (or in this case vanilla wafers!) are one winning combination that are pure perfection.

The biggest thing to keep in mind when you’re making this simple cheesecake recipe is that you need to pay attention to the cooking process. The cooking time in the Instant Pot is really an important process. Why spend all this time making the cheesecake and try to cut corners in the end?

My boys have eaten my cheesecakes their whole lives and they’re absolutely in love with this recipe. I can’t say I blame them – it’s one of my favorite ways to use bananas in a dessert!

How do I get the cheesecake filling creamy?

I like to use my stand mixer to really mix up the cream cheese and sour cream. You need that fast mixing motion of an electric mixer to get that smooth and creamy texture.

How do I know cheesecake is cooked all the way?

Make certain that you have enough cups of water added to the Instant Pot before cooking. I add the water in 1/2 cup increments. You need to be certain to cover the cheesecake as well.

After the cooking time has passed, there shouldn’t be any liquid on the top. It should have a very slight jiggle to it, but not be overall jiggly. You can also let it cool a bit to see if it’s firming up.

Instant Pot Bananas Foster Cheesecake Recipe

This Instant Pot cheesecake recipe is super fun and delicious!

Ingredients

Crust

  • • 1 cup of vanilla wafers
  • • 4½ T of butter
  • • ½ cup of brown sugar

Cheesecake filling

  • • 3 packs of softened cream cheese
  • • 1 cup of granulated sugar
  • • 3 T all-purpose flour
  • • ¾ cup of sour cream
  • • 1 t of banana extract
  • • 1 t of rum extract
  • • 3 eggs at room temp

Cheesecake Topping

  • • 1 cup of brown sugar
  • • 6 T of butter
  • • ½ cup of heavy cream
  • • ½ t of salt
  • • ½ t of banana extract
  • • ½ t of rum extract
  • • 1 cup of bananas that are sliced

Instructions

To make the Crust

Mix together all the crust ingredients.

Spray an 8-inch springform pan with nonstick spray.

Put the crust mixture into the pan and press in. Pop into the freezer.

To make the Cheesecake filling


Mix the cream cheese and sugar with a mixer.

Add in the flour, sour cream, banana extract, and rum extract and mix well.

Add in eggs one at a time and blend.

Put 1 1/2 cups of water in the bottom of the Instant Pot.

Put the cheesecake filling into the crust. Cover with foil, seal the edges. Place pan on the trivet and put in the Instant Pot.

Sea the lid and set the timer for 45 minutes on high.

Let natural release for 10 minutes and the middle should be jelly-like.

Let cool on a wire rack.

To Make the Topping


Add the sugar to a saucepan and heat over medium heat. Stir the whole time and do not burn.

Put in the butter and stir and melt.

Cook for 1 minute without stirring.

Add in the whipping cream slowly and stir. Once added, stop stirring and let it boil for 1 minute.

Take off of the heat and stir in the rum extract, salt, and banana extract. Allow cooling.

Put the sliced bananas on the top of the cheesecake.

Pour topping over the top.

Let cool before slicing.
