Ingredients
2Tablespoonsof olive oil
1small diced red onion
1diced green bell pepper
1diced red bell pepper
Salt and black pepper
½teaspooncrushed red pepper flakes
1Tablespoonof ground cumin
2teaspoonsof chili powder
½teaspoondried oregano
2cubed and peeled sweet potatoes
3Tablespoonsof tomato paste
2 15-ounce.can black beansrinsed and drained
3Cup(s)of vegetable broth
1Cup(s)of frozen corn
¼Cup(s)of chopped fresh cilantro
2Tablespoonsof fresh lemon juice
Instructions
Put the olive oil into a large pot and heat over medium heat. Add in the onion and peppers. Stir until they are soft and fragrant, about 4-5 minutes.
Add in your red pepper, cumin, chili powder, and dried oregano. Cook and stir for about 1-2 minutes.
Put in the sweet potatoes, tomato paste, and black beans. Stir. Put in the vegetable broth and change the heat to medium-high heat. Let boil, then reduce to medium-low heat. Cover with a lid and simmer for 15-20 minutes.
Add in the cilantro, corn, and lemon juice. Enjoy!
