Blueberry Cheesecake Popsicle Recipe

Making the blueberry mixture and adding it to the popsicle mold is really, really simple to do. In fact, have the kids join in on the fun and help! They can help with adding the popsicle sticks and freezing them!

We like to make these for hot days, but I crave them all year. They’re such a simple dessert option that is so much better than anything else out there!

I really enjoy the blueberry lemon flavor of these popsicles, so much so that I’ll usually make a double batch from the start. My boys devour them, especially during the hotter months of the year!

If you can buy the blueberries when they’re in season – SCORE! While the recipe calls for frozen, you can freeze the fresh blueberries and use them for later. The flavor of fresh and ripened blueberries is insanely good!

How long do homemade popsicles take to freeze in the ice pop mold?

They’ll need a minimum of 8 hours to freeze, but I recommend you make them the day ahead and let them freeze overnight.

Letting them freeze the whole time is important so they’re ready to go and aren’t a mess! Don’t rush the process, even though you might be tempted to!

One other pro tip is to be sure to follow the printable recipe card below. If you don’t measure the ingredients correctly, the popsicles will be liquid and not form or take even longer to freeze.

How long will popsicles last in the freezer?

For the best flavor and results, plan on eating these within 2-3 days of making them! But I don’t think they’ll last that long before they’re gobbled up.

When the months are hot, you can make a couple of batches and store them in the fridge so that you never run out of popsicles!

You want to be sure that you keep the popsicles covered so that they don’t get freezer-burnt while they are stored. Most popsicle molds come with a lid that you can keep on the popsicles until they are eaten.

If your molds do not have this, you can easily add a baggie over the top of the popsicle and seal it at the bottom with a rubber band.

Blueberry Cheesecake Popsicle Recipe

This Blueberry Cheesecake Popsicle Recipe is sure to be one of your favorites! Nice and creamy and easy to make. You'll love the blueberry flavor!

Ingredients

  • 1 cup of frozen blueberries 
  • 1/3 cup of sugar
  • 8 ounces of softened cream cheese
  • 1/3 cup of sugar
  • 2 tsp lemon juice
  • 1 tsp lemon zest

Instructions

Cooking option #1:

  1. Put the blueberries, 1/3 cup of sugar, and the zest in a pan. Heat until the sugar is dissolved all the way.
  2. Put the mixture into a blender and blend until smooth.
  3. Add in the cream cheese, 1/3 cup sugar, and lemon juice.
  4. Blend.
  5. You can add 2-3 T of milk if it's too chunky.
  6. Put in 1/3 cup of blueberries and fold gently.
  7. Add the cream cheese mixture to the mold, and then pour the blueberry mixture in.
  8. You can also use piping bags to do to make those layers.
  9. Use a knife to swirl it around and add popsicle sticks.
  10. Put in the freezer for 8 hours.

Cooking Option #2:

  1. Add everything to the blender and blend until smooth. Pour into the molds and freeze for 8 hours.
