There is nothing like a delicious & hearty soup recipe to warm you from the inside-out during a cold winter day, and this 5-ingredient Broccoli Cheese Soup definitely fits the bill!
It works equally well as a quick stove top meal or 5 ingredients crockpot recipes, depending on what works best for you and your family.
I make soup nearly every week starting in October – it is such a comforting staple in our weekly meal plans. But it wasn’t always that way – I actually hated soups before I had children because I had only ever eaten the kind that comes in a can!
Soup can be a filling and indulgent meal if you are armed with a great recipe. I also find soup to be a great way to sneak healthy ingredients into our family meals without the kids being any the wiser! I love to sneak in pureed or diced vegetables that the kids might not be willing to eat otherwise.
Because this recipe uses evaporated milk rather than regular milk you can easily throw all of these ingredients in the slow cooker for 2 hours on low and come up with the same results. (Milk can separate if left too long in a slow cooker and is usually best added towards the end of cooking time.)
I didn’t add salt and pepper to this recipe but they are essential for a finishing touch for me. I like using a good-quality sea salt like Maldon. You can also add a bit of minced garlic to the sautee stage in this 5-ingredient Broccoli Cheese Soup recipe, if you’re not too worried about adding in that 6th ingredient!
- 2 cups cheddar cheese shredded
- 2-8 oz cans evaporated milk
- 4 cups chicken stock
- 2 cups broccoli chopped
- 1/2 onion chopped
Add a tablespoon of chicken stock and the diced onion to a stockpot.
Heat over medium heat until the onion is translucent, about 5 minutes.
Add the broccoli florets and cook until wilted, about 2 minutes.
Pour in the milk and remaining chicken stock.
Bring to a boil and then reduce heat to a simmer. Sprinkle in cheese and heat until the cheese is mostly melted.
