This Strawberry Banana Granola Parfaits Recipe is a fast and easy way to use delicious ingredients for a yummy snack.

Ingredients

  • 6 large dates, pitted

  • 3 tbsp natural almond butter
  • 
3 tbsp honey

  • 2 tbsp coconut oil, melted

  • 1 tsp real vanilla extract

  • 1 cup rolled oats

  • ½ tsp ground cinnamon

  • ¼ tsp salt

  • ¼ cup raw almonds, roughly chopped

  • 2 tbsp sunflower seeds

  • 2 cups plain Greek yogurt
  • 
2 large bananas, sliced

  • 1 cup fresh strawberries, sliced

Instructions

  1. Preheat the oven to 350 degrees. Add parchment paper to an 8X8-inch pan.
  2. Mix the pitted dates, almond butter, honey, coconut oil, and vanilla extract in a food processor or blender. Mix until smooth and creamy.
  3. Put the mixture in a bowl and add the cinnamon, salt, oats, almonds, and sunflower seeds. Mix well until the nuts and the oats are coated.
  4. Pour the mixture into the baking dish and pat down to make it nice and even. Put in the oven and bake for about 20 minutes.
  5. Take it out of the oven and let it cool to room temperature.
  6. To serve, alternate layers of granola, yogurt, sliced bananas, and fresh strawberries.
