While we make our RoTel dips in the microwave, you could certainly do it in a crockpot. It will just take a bit for the cheese to melt in a slow cooker, so be sure to allow for that. Or, for the cheater’s way: make the dip and transfer it to the slow cooker to keep it warm.
If you read this whole thing, you are going to find a secret. Adding a 1/2 cup of shredded Parmesan cheese to the mixture will take the entire dip up a notch. No one will be able to figure it out, but they will love it! Check out the rest of my popular dip recipes, too!

Specialty Ingredients:
The following ingredients are affiliate links on Amazon because they may be a bit hard to find in your normal store. I wanted you to be able to see exactly which things we are using.
Velveeta Cheese – I have bought store brand, but prefer Velveeta. The other is kind of chalky while Kraft stays creamy.
Ro Tel – While I am bad about buying store brand foods, there are certain things I do not skimp on. RoTel is one of them.
That’s it! Only two ingredients in the Easy RoTel Dip with No Meat Recipe. That makes this one of the easiest ever, warm dip recipes around.

Must Have Resources:
When making this Easy RoTel Dip with No Meat Recipe at home, you really need to have the following Amazon affiliate tools on hand.

What other ingredients pair well with Rotel?
When it comes to making the perfect dish with Rotel, several ingredients pair exceptionally well.
An ideal starting point for any new recipe is to consider what type of cuisine will best complement the flavorful tomatoes and green chilies.
For example, when creating a Mexican-style dish, traditional staples like cumin, cloves, and oregano should be included to bring out the flavor of the Rotel.
Alternatively, Rotel can be used in pasta dishes with sautéed garlic and onions as these pungent ingredients blend nicely for an Italian-inspired meal.
In addition, many southwestern casseroles are enhanced by the addition of Rotel; topping them off with shredded cheese and tortilla chips gives them an extra crunchy texture.
As demonstrated through various classic recipes, Rotel adds unbeatable flavor while working hand in hand with other ingredients to produce delicious meals.
What can you dip into Rotel?
Not only is it great as a topping, but it can also be used as the base for various dips and be used to dip various food items into it.
On the healthy side, you can chop up some veggies and dip those into the Rotel!
If you don’t want to dip anything into it, you dont’ have to. You can always use it to drizzle across nachos, top on burgers, or even have it as a fun sauce for a sandwich.
It’s perfect for dipping crackers and chips into the dip – or even just using a spoon!
No matter how you use the tasty contents of this “Texas-size” can of delight, the outcome will surely satisfy.
How do you reheat leftover Rotel?
Reheating leftover Rotel successfully depends on the source and cooking method used when preparing the dish originally.
Reheating in a microwave oven allows quick and easy reheating, but the dish can quickly dry out if not monitored carefully.
For best results, mix equal parts leftovers with naturally moist ingredients such as canned tomatoes, tomato sauce, or water to help prevent drying.
Cooking again over low-medium heat in a stovetop pan can help rehydrate the leftovers while helping to avoid overcooking.
Whether reheated in the oven or stovetop, it’s important to watch the dish during reheating for potential safety hazards such as boiling temperatures or excessive charring.
Can I freeze Rotel?
Rotel is a brand of canned tomatoes with chili peppers and other spices, popularly used for its unique flavor. The question of whether or not it can be frozen typically arises due to its versatile use in a variety of dishes.
You can freeze the dip, but the texture might be quite different once it’s thawed. For the best texture and taste, eat the dip fresh and enjoy.
