This chocolate cake cupcake is not only full of chocolate flavor but it’s also the perfect combination of coffee and chocolate as well. It’s literally one of my favorite chocolate cupcakes recipe! I literally crave these cupcakes all the time, which is why I keep this recipe handy!

Being able to use a boxed cake mix makes it so simple and easy to do! I love that little cooking hack because it saves me so much prep time! Cake mixes are great for making cakes, cookies, crumbles, and more!

Truth be told, I’m pretty much addicted to the taste and flavor of these Mocha Cupcakes because they’re just that good. They’re one of the reasons that I just can’t say no to sweets! (and when my tastebuds love them this much, I’m never going to tell them no!)

Mocha Espresso Cupcakes Recipe

While I love the coffee flavor of these cupcakes, it’s safe to say that I really love the espresso buttercream frosting. I’m a frosting fan. What can I say? This recipe is also great because it makes 24 cupcakes, but you can easily halve it to make 12 cupcakes instead. (I always make 24 – but I have to limit myself lol)

I used to worry about using instant espresso powder in the cupcakes with the kids, but they love this recipe just as much as I do! I just make them eat their dessert a little bit earlier in the day, and they don’t mind at all!

Do I really need to use cupcake liners?

Yes, you do! If you don’t want some of your cupcakes to stick to the muffin pan, line it with cupcake liners! It’s the easiest way to not make a mess.

You can even make these cupcakes festive and fun by changing up the type of cupcake liners that you use! I love using red and green liners during Christmas and then bright orange liners during Halloween.

There are even some cupcake liners out there that have cute pictures on them as well, which would just add to the appeal!

If you don’t want to use cupcake liners or don’t have them on hand, you need to make sure that you’re greasing the cupcake tin really, really, really well. Spray it with nonstick spray so that the batter won’t stick to the sides while the cupcakes are baking.

What can I use instead of frosting to top cupcakes?

If you don’t want to add or make your own frosting, you can always sprinkle on a little bit of powdered sugar or even drizzle on some maple syrup. All options are good options!

Sometimes, we’ve even melted some chocolate chips and spread that on top, and then added sprinkles. Whatever you’re craving, you can make happen!

Mocha Espresso Cupcakes Recipe

Yield: 24 cupcakes

This Mocha Espresso Cupcakes Recipe is one of my favorites!

Ingredients

  • Chocolate box cake mix plus ingredients listed
  • 1 teaspoon Espresso Powder

Chocolate-Covered Espresso Beans:

  • 1 cup Chocolate Chips
  • 72 Espresso Beans

For the Mocha Frosting:

  • 1 cup Butter, softened
  • 4-5 cups Powdered Icing Sugar
  • 2/3 cup Cocoa Powder
  • 1 teaspoon Espresso Powder
  • 1 teaspoon Vanilla Extract
  • 2-4 Tablespoons Milk/Cream

Instructions

  1. Make the cupcakes according to the recipe o the boxed cake mix. Add in the espresso powder by dissolving it in hot water.
  2. While the cupcakes are baking, make the chocolate covered espresso beans.
  3. Add parchment paper to a baking sheet.
  4. Melt the chocolate chips in 25 second bursts and stir between each time.
  5. Dip the beans into the chocolate one at a time using a fork. Set the beans on the parchment paper and repeat.
  6. To make the frosting, beat the butter for 20 seconds and then add 4 cups of the icing sugar plus the espresso powder and cocoa powder. Beat for 2 minutes.
  7. Add the vanilla and 1 T of milk or cream. Beat for 1 minute. Taste and add more sugar if you'd like.
  8. Put the frosting in a piping bag with a tip.
  9. Add to the cooled cupcakes and add three dried espresso beans to the top of every cupcake.
